Thường với thịt bò Rosie không tiêu thụ quá nhiều, vì một phần nó đắt với một phần ăn thịt đỏ quá nhiều cũng không tốt cho sức khỏe, nên chắc 2-3 tháng một lần mình mới ăn Steak cho đỡ thèm thôi. Do đó mình đặc biệt để ý đến cách chế biến sao cho thịt không bị khô, dai nếu không thì đi tong cả trăm nghìn ý 😂. Các nàng để ý những ai sành ăn Steak thường hay chọn mức Medium hoặc là Medium Rare, ít ai chọn Well Done vì bít tết khi nấu chín kỹ thường bị khô và dai, ăn sẽ không cảm được vị ngọt của thịt (như sếp Gordon Ramsay nói là bị Overcooked --> get out of the kitchen!🤬)🤣🤣.

Cách làm:
- Thịt ướp đều hai mặt với chút muối hồng Hymalayan và tiêu đen, ngoài ra Rosie còn sử dụng thêm gia vị chuyên dùng cho Steak nữa (hiệu McCormick nhé).
- Làm nóng chảo mức nhiệt cao (bếp hồng ngoại là mức 9) nhá, một chút xíu dầu olive, sau đó cho thịt vào áp một phút, rồi hạ nhiệt xuống mức 7 áp thêm 1 phút nữa.
- Lật mặt và cho thêm bơ lạt, tỏi🧄, và Rosemary vào cho dậy mùi thơm, dùng muỗng rưới hỗn hợp bơ dầu và nước từ thịt có trong chảo lên bề mặt miếng thịt nhé. Áp một phút thì lấy ra để thịt nghỉ khoảng 5-10 phút thì hẵng cắt nhé ➡️ hoàn thành món Steak mức Medium Rare rùi. Nhưng mà cũng tùy khẩu vị mỗi người nhé, nếu mọi người muốn chín kỹ thì mỗi mặt thêm 1 phút nữa là được.
- Dùng lại chảo không cần rửa để sauté các loại rau quả ăn kèm, không cần thêm dầu nha, nếu thấy chảo khô quá thì nên cho thêm một tí nước vào đậy nắp là được. Rosie sử dụng khoai tây và măng tây, thêm một quả trứng ốp la hoặc trứng chần nữa. Các nàng có thể dùng nấm, hành tây, bắp cải tí hon (Brussels Sprouts) cũng rất hợp nè🍄🧅🥬

For this video, we went down to Fairprice Xtra at Parkway Parade to EAT A MASSIVE SUPERMARKET Feast! Been a while since I've done something like that and this Fairprice Xtra has a new concept where there is an in-house kitchen, dining area, cocktail bar & coffee shop.
The kitchen managed by Bantong Seafood, will cook any fresh food you select in the store and cook it for you on the spot. They also have a fixed menu for you to choose from, ranging from Fish & Chips to Fried Rice.
For my challenge, I ordered a host of items from the fixed menu together with fresh food like a whole fish that was gutted and cooked for me and a premium snow-aged Wagyu steak.
The standout dishes would be the snow aged Wagyu Steak and Hybrid Grouper. The steak was wonderfully marbled and extremely appealing to the eye. Bantong seared it expertly to medium rare while basting it in butter. It was very sweet and tender, almost like butter with meaty notes. Even eating the fatty parts of the ribeye was amazing, truly melting in your mouth.
The Hybrid Grouper is actually a specially bred breed of grouper by Singapore's own aquaculture company, Apollo Marine. It was thick and full of plump meaty flesh. Steamed whole and dressed in a Chinese-style soy dressing, each mouthful of fish was bursting with flavour.
I do recommend trying their chicken poppers as well, deep fried to perfection with a nice sweet & savoury glazed on the exterior.

材料:
三文魚扒 1件
雞蛋 3隻
洋葱 半個
薯仔(小) 1個
番茄 半個
新鮮羅勒葉 5片
海鹽 適量
即磨黑椒 適量
做法:
1.三文魚扒洗淨,去骨切小粒。
2.洋葱去皮切絲,薯仔去皮切薄片,番茄切片。雞蛋打勻。
3.下油,油滾,放入洋葱絲炒勻,加入薯片煎至微微金黃色。
4.放入三文魚粒煎至轉色,以海鹽及即磨黑椒調味,平均地倒入蛋液,加蓋以中小火焗煮2-3分鐘至半熟狀,放上番茄片,再加蓋用中小火焗煮至蛋熟透,放上新鮮羅勒葉裝飾,即成。
Salmon Quiche
Ingredients:
1 frozen salmon steak
3 eggs
1/2 onion
1 potato (small)
1/2 tomato
5 fresh basil leaves
Some Salt
Some Black pepper
Steps:
1.Wash the salmon steak, remove the bone and cut into small cubes.
2.Peel and shred the onion. Peel the potato and cut into thin slices. Slice the tomato. Beaten the eggs.
3.Heat oil to boil. Add the shredded onion and stir well. Add potato slices and pan fry until it’s golden.
4.Add the salmon cubes and pan fry until the color is changed. Season with salt and black pepper. Pour in the egg liquid evenly. Cover with lid and cook for 2-3 minutes with medium-to low heat. Place the tomato slices on top. Lid on again and cook until it’s done. Add the fresh basil leaves. Ready to serve.

-- 紅酒醬汁 Red Wine Sauce–
材料 Ingredients:
乾蔥 Chinese onion | 2 pcs
蒜蓉 White wine | 2 cloves
紅酒 Red wine | 100 ml
牛高湯 Beef stock | 100 ml
牛油 Butter | 10 g
麵粉 Flour | 10 g
做法 Method:
1. 開火,在鍋中放入油、乾蔥碎和蒜蓉炒香。加入紅酒,煮數分鐘把一半的水分收汁。
2. 之後倒入牛高湯,再收汁。
3. 把牛油和麵粉混合成麵糰。放入醬汁裡攪拌。調味。煮數分鐘汁稠身。完成!
1. Turn on the heat, pour some oil into the pot and saute the chopped shallots and garlic. Add the red wine into the pot. Cook for a few minutes and reduce the liquid in half.
2. Add the beef stock and reduce it in half again.
3. Mix the butter and flour to make beurre manie. Add it into the sauce. Season it. Keep stirring it and cook until the sauce starts to thicken. Done!

材料 Ingredients:
蕎頭 Chinese onion | 3 pcs
白酒 White wine | 100 ml
牛高湯 Beef stock | 100 ml
牛油 Butter | 10 g
麵粉 Flour | 10 g
淡忌廉 | 100 ml
做法 Method:
1. 開火,在鍋中放入蕎頭碎和白酒,煮數分鐘把一半的水分收汁。
2. 之後倒入牛高湯,再收汁。
3. 把牛油和麵粉混合成麵糰。調味。放入醬汁裡攪拌。煮數分鐘汁稠身。
4. 關火,倒入淡忌廉。攪至均勻並完成。

乾蔥 Chinese onion | 2 pcs
龍蒿 Tarragon | 1 stalk
白酒 White wine | 100 ml
檸檬 Lemon | 1 pc
雞蛋 Egg | 1 pc
澄清牛油 Clarified Butter | 150 g
做法 Method:
1. 開火,在鍋中放入乾蔥碎、龍蒿碎和白酒,煮數分鐘把水分收至約1湯匙份量。倒出隔渣,把精華放涼備用。
2. 之後在熱水上放上一隻碗,放入蛋黃和精華。開始拂打。之後,一邊加入溶化的澄清牛油,一邊繼續拂打,至達到像蛋黃醬的濃稠度便可。
3. 再放入調味和龍蒿碎,拌勻便成!
1. Turn on the heat, get the chopped shallot, tarragon and white wine into the pot. Cook for a few minutes and reduce to a tablespoon of liquid. Strain it, and reserve the liquid.
2. Place a bowl over a bain-marie, put the yolk and the liquid into the bowl. Start whisking it, while slowly adding the clarified butter. Keep doing it until the consistency becomes something similar to the texture of a mayonnaise.
3. Season it and add some more chopped tarragon. Mix well. Done!
