Homemade Vietnamese Beef Stew (Bò Kho). I enjoyed this amazing stew by dipping a fresh baguette to absorb all that flavor! ❤️🍲

♨️ Directions (serves 4-6):
⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
1️⃣ Marinate the beef
• Buy 3 lbs of beef (shank/brisket)
• Cut beef into 1 inch cubes
• Marinate beef with: 2 tsp sugar, 1 tsp salt, 1 tsp pepper, 2 tbsp bo kho powder (or five spice), 1 tsp chicken stock, 2 tbsp soy sauce, 1 tbsp grated ginger, 1 tbsp minced garlic
• Cover and marinate over night in the fridge
⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
2️⃣ Cook the beef
• In a pan, heat 1 tbsp vegetable oil and stir-fry 1 tbsp garlic, 4 stalks of lemongrass (cut into 3 inch pieces), 4-5 star anise, and 1 stick of cinnamon with the marinated beef
• Cook beef to medium rare and turn off the heat
⠀⠀⠀⠀⠀⠀⠀⠀⠀ ⠀⠀⠀⠀⠀⠀⠀⠀⠀
3️⃣ Make the soup
• In a pot, add the cooked beef, 1.5 cups of tomato sauce, 1.5 cups coconut water, and 6 cups of beef broth (or water, but it won't be as flavorful)
• Peel (4-5) carrots. Cut them into bite size pieces and add them to the pot.
• Cover and cook soup until the meat and carrots are tender. Adjust with salt/sugar/bo kho powder as needed.

**optional: cut the carrots into flowers just for fun (see highlights); also optional: sauté the carrots with: 1 tbsp oil, 2 tsp sugar, 1 tsp salt, 1 tbsp oyster sauce before adding it to the soup for more flavor.

4️⃣ Time to eat!
• You can garnish the soup with thai basil, peppers, fried shallots and/or sliced onion.
• Enjoy with a crunchy baguette, rice, or noodles. 👌🏻

Ingredients:
1 pouch of Nona Lim coconut lime chicken bone broth
1 Nona Lim laksa rice noodle
2 chicken thighs - cubed
1 package of sliced mushrooms (baby Bella or your choice)
1 small shallot - minced
1 small garlic clove - minced
1 red Thai chili peppers - minced
1 tbsp vegetable oil
Chicken marinade:
1 tsp Red Boat fish sauce Red Boat Fish Sauce
1 tbsp VM Lemongrass paste Voracious Market
1 tsp of granulated chicken soup mix

Steps:
1. Mix all chicken marinade ingredients together in a bowl. Add chicken and coat all chicken pieces.
2. Add 1 tbsp of vegetable oil in medium heat. Add garlic, shallots and chili peppers and sautéed until fragrant.
3. Add chicken and cook for 3-4 minutes or until chicken is slightly golden.
4. Add mushrooms. Cook for another 1-2 minutes, constantly stirring.
5. Heat up bone broth in a pot.
6. Once soup is bubbling, add the chicken and mushroom.
7. Prepare noodles per box instructions.
** Optional:
1. Bok choy - dip in soup to cook to your liking
2. Chili peppers for added heat

7) Stir fried rice noodles with chicken and bean sprouts and bamboo shoots
