I recently went to Momochan, a pork free Japanese Restaurant at The Square, Jaya One to sample their festive offerings.

Serving Japanese Donburi, Teishoku, Japanese Karaage and Japanese Desserts, Momochan focuses on giving customers a good and as authentic as possible Japanese food experience. The restaurant also offers a pet-friendly section for patrons to dine and chill with their furkids.

Some of the festive offerings that I enjoyed are Shitake Nanban, Karaage Winglets, Plain Chawanmushi, Southern Fried Chicken, and their Christmas Beef Special.

I like the Australian Tenderloin dish, where chef pan seared the beef first, sous vide it then char grilled till nicely done. Japanese ponzu and grated radish sauce was served together to add little sourish taste to your festive meat dish.

★酥皮Puff pastry dough:
中筋面粉175g,175g purpose flour
水95ml,95ml water
盐1/2小勺,1/2 tsp salt
黄油85g,85g butter
★惠灵顿牛排(4人份)Wellington steak(4 servings):
酥皮300g,300g puff pastry dough
菲力牛排500g(长条状),500g beef tenderloin
口蘑250g,250g tricholoma
干牛肝菌10g,10g dried boletus mushroom
第戎黄芥末1大勺,1 tbsp Dijon Mustard

上年臨尾香比大家笑到gapgap聲嘅威靈頓牛,終於有機會 remake。
唔駛再得失呢個英國名菜, 同上次大致上差唔多,唯一唔同嘅就係今次慢煮好之後我哋再做一次 reverse sear, 令到件肉更香,口感同味道多啲層次。
始終有時開party 為咗食物種類好多多元化,慢煮定一啲食物真係可以幫到手 :)

I remade this for my beef wellington video last year, finally got a chance to make it for Christmas again this year. This is an old classic British fart which can't let it goes wrong. The precedure is pretty much the same apart from the reverse sear which I've used in this video to enhance the flavour and texture to another level.

【COFFEE SIGNATURE | 低調而精緻的料理】
Coffee Signature開幕了一周年,
新菜單主打著Semi-Fine Dining的西式料理,

一道一道細細品嘗。

Appetizer:
? Bruschetta Shrimp RM16
從港口引進的大蝦,搭配Ebiko和美乃滋醬鋪在烤得香脆的法棍麵包上。可以吃到大蝦的鮮美肉質。
Soup:
? French Onion Soup RM18
使用雞高湯,和大量洋葱煮成濃湯,喝起來有洋葱的鮮甜味,
搭配著起司烤法棍一起吃更加美味。
Pasta:
? Linguine Creamy Mushroom RM20
蘑菇奶油醬比例很剛好,吃到最後也不會感覺膩。
再加上一顆低溫烹煮的Sous-vide溫泉蛋拌入一起吃非常順口。
Main Course:
? Espresso Coffee Chicken RM28
加入咖啡一起烹調的sous-vide鷄腿,搭配特調的Coffee Cream Sauce。微甜微苦還帶點焦香氣提升了味道。
?12hrs Sous-Vide Lamb Shank RM48
經過12小時Sous-Vide方式烹調的羊腿非常值得吃,軟嫩度掌握得剛好,而蒜頭和Mint Sauce去除了羊肉的膻气味。

非常健康也很好吃的一道料理。紙包著的三文魚和西式香料一起焗烤,
完全鎖住了香氣和三文魚的鮮美。
