<又是低醣日式芝士蛋糕>
這個是第3個~
但是仍然不滿意
蛋糕面的上色不美
且在轉了溫度時超快就裂開了~
我都在嘗試不同的溫度組合
溫度控制實在不容易
而我又想懶一點(因為不想不停轉溫度😬)
反正有烤熟
且待蛋糕放涼後裂紋都變得沒有那麼明顯
又是自己食
算吧~
趁著下午兩兄弟在後院玩得高興
偷偷來了一個下午茶
享受一下難得的寧靜
這蛋糕因為只有雞蛋、cream cheese和赤藻糖醇
它的澎漲都只靠打的蛋白和混合麵糊時的方法
還有就是蛋的多少
今次我試只用3顆雞蛋
相對就沒有之前用4顆雞蛋那麼高
但口感是一致的
就是非常的濕軟
吃的感覺是有點入口即溶
但有陣很香的芝士味留在口中
配合茶或咖啡應該都會很配合

材料:(4寸圓形蛋糕的份量)
Cream cheese 200g
雞蛋 2隻(分開蛋黃和蛋白)
糖 40g (我用了赤藻糖醇)
(因為我用6寸模,且我買到的cream cheese是340g,所以我用上面份量來乘大,因為不想差一點又開一盒cream cheese)
做法和一般日式芝士蛋糕幾乎一樣
1. 預先煲好熱水和預熱焗爐
2. Cream cheese隔水煮溶加蛋黃混合
3. 蛋白打至起泡加糖再打至濕性打發(就是起勾)
4. 把蛋白分三四次輕手加落cream cheese蛋黃糊混合
5. 倒入已加牛油紙圍邊和底的蛋糕模
6. 把蛋糕模在桌上輕敲數下
7. 倒水入焗盤再放蛋糕模再放入焗爐焗
焗的時間:
(水浴法:就是要加水在盤才放蛋糕盤,如果是活動盤記得包兩層錫紙)
100度焗60分鐘
160度焗10分鐘
檢查如果熟(用竹籤刺下看有沒有麵糰黏著,有再焗5-10分鐘再檢查)
關爐,打開少少爐門,讓蛋糕待在裡面最少30分鐘
我的問題就卡在焗的時間
因為由4寸轉了6寸
時間上要做調整
暫時是先低溫焗,到尾10分鐘才調高溫度
要繼續做實驗
還有檢查熟/不熟都未能嘗握
因為我用籤來查看
熟/不熟都有一點麵糰黏著😂
現在感覺焗長時間一點就穩陣一點吧!
今次用了40% less fat的cream cheese來做這個蛋糕
1/8件蛋糕的營養:
熱量約92.15kcal
碳水約2.04g
蛋白質約5.4g
脂肪約6.55g
作為一個正在減醣的人
可以吃到這沒什麼負擔的甜點都非常開心
我還會繼續挑戰它的
不過下一次的芝士蛋糕應該會試巴斯克芝士蛋糕
因為同樣是芝士蛋糕但口感完全不同
吃了幾次日式芝士蛋糕
都想轉轉口味了~

<低醣日式芝士蛋糕>
前幾天試做了一個日式芝士蛋糕
這個芝士蛋糕只需要用3種材料
就是cream cheese、sweetener和雞蛋
不需要用任何麵粉
所以就是非常低醣
1/8個蛋糕只有2g的醣
就是吃1/4個蛋糕也不用擔心爆醣
本來的食譜是4寸的大小
我家剛好有盒正常的cream cheese和一盒light cream cheese
所以我做了一個6寸的大小
因為大小不同
所以我焗的時間也延長了
但最後表面裂開了😬
所以不算非常成功
但它就是非常非常軟綿綿
甚至有一點點濕度
而且它還會左搖右擺
(我把那左搖右擺的片段放在留言)
試吃專員說
口感有點像吃空氣😂
有很香濃的芝士味但不膩
所以大家都吃完一片再一片😆
這個芝士蛋糕上昇得非常高
希望下次再焗不會裂開才算真的成功
如果整個都用light cream cheese卡路里會可以再低
現在1/8片大約120卡路里(還可以吧~)
如果想要低醣但高卡路里的甜品
這個還算不錯🤣

/橢圓輕乳酪蛋糕2個配方/
//材料 Ingredients//
[蛋白霜 Meringue]
蛋白 egg white 4個
檸檬汁 lemon juice 10ml
細砂糖 sugar 80g
[起司蛋黃糊 cheese batter]
牛奶 milk 170ml
奶油乳酪 cream cheese 170g
奶油 unsalted butter 60g
低筋麵粉 cake flour 40g
玉米粉 corn starch 20g
蛋黃 egg yolk 4顆
[鏡面果膠 Glaze]
洋菜粉 agar powder 1g
水 water 100ml
砂糖 sugar 1小匙 tsp
/烘焙温度/ Bake Temperature
上火 200度/下火130度 烤10分上色。
再降至上火120度/下火130度 烤60分。悶5分鐘。

7 Tips to make Kyaraben (character Bento lunch box)
#1 Find the image easy to work with: Opened eyes are sometimes difficult to make, so choosing the character with smiling eyes or winked eyes saves time.
#2 Make rough sketch of Bento: detailed ideas are better because you may run out of energy to go easy.
#3 Shop ingredients based on your sketch: if you have detailed ideas with you, you may luckily find better ingredients.
#4 Use vivid colors for the egg crepes. Egg white is easy to break, so you can mix starch and water to prevent it from breaking(1 tsp. starch & 1 tsp. water for 1 egg white).
#5 Start from larger parts, trace them on a parchment paper, and cut out the ingredient with a design knife.
#6 Make sure you don't put eyes on top of ham (face). Face parts must be at the same level or eyes will look like popping out and scary...
#7 Cut Nori seaweed lines as thin as possible. Thick lines look sloppy...
Basic ingredients you need to make Kyaraben:
egg
food coloring
cheese slices
ham slices
Kanikama (fish cake)
Kamaboko (fish cake)
Time you need may depend on the character and your concentration. Please take time to make it. You can make the character a day before and keep it in the fridge.
*You can make rice or noodle dish with a lot of vegetables to save time making side dishes.

7 Tips to make Kyaraben (character Bento lunch box)

滿杯紅柚 Grapefruits Special
Ingredients:
Drinkable Water (Room Temperature) --- 900 ml
Jade Oolong Tea ------------------------------------ 8 g
Grapefruits --------------------------------------------- 2 Pcs

Preparation:
1. Put the jade oolong tea leaf in tea bag. Put it into a bottle and add room temperature water into it.
2. Store the bottle in the fridge to infuse for 10 hours.
3. Prepare the grapefruits flesh from a single grapefruit.
4. Prepare 4 slices of grapefruit from another one. Squeeze out the juice from the rest of the grapefruit.
5. Add sugar to the grapefruit juice and mix well.
6. Put a piece of grapefruit slice into a glass. Add the grapefruit flesh, juice and oolong tea to finish.

【滿杯紅柚】
材料:-
室溫食用水..........900ml
翡翠烏龍茶葉.......8g
葡萄紅柚...............2個
糖...........................2湯匙
做法:-
1. 將翡翠烏龍茶葉放在玻璃瓶內,注入室溫食用水,然後放進冰箱冷藏浸泡約10小時。(可視乎自己喜愛的濃度加減茶葉的多少與浸泡時間)
2. 將一個紅柚起肉備用。
3. 另外一個紅柚切四片薄片備用;餘下的紅柚榨汁加入糖拌勻備用。
4. 杯中放紅柚薄片,加入紅柚肉、紅柚汁、冰塊、冷泡翡翠烏龍茶即成。
【Basque Burnt Cheesecake 】
材料:-
忌廉芝士................500g
鮮忌廉....................220g
糖...........................120g
雞蛋.......................3隻
低筋麵粉................12g
雲呢拿籽/香草精....少許
檸檬汁....................1/2個
做法:-
1. 忌廉芝士提前置於室温放軟,然後放入碗內,用電動打蛋器把忌廉芝士打至軟滑,逐少加入糖打至幼滑。
2. 雞蛋逐一加進碗內,分次發打均勻 。
3. 把低筋麵粉、鮮忌廉、香草籽、檸檬汁加入碗內拌勻成麵糊。
4. 將麵糊過篩,然後注入已鋪兩層牛油紙之蛋糕模內,把蛋糕模輕敲幾次,而排出多餘之氣孔。
5. 放入已預熱之烤箱,以220度烤30分鐘便可。
