Ask me about the best meals I had in Penang and beside from the few finer dining exceptions, for local food I was most enamoured with one particular place and it isn't actually a restaurant! @nazlinaspicestation George Town is a cooking school and so so much more. Located in Campbell Street overlooking the main junction, Nazlina teaches her student how to cook various Malaysian and quasi Malaysian dishes such as Nasi Lemak, Rendang and Laksa but she will also cook up dishes on the fly depending on what is found together with the students at the fresh markets in the morning. The coconut and forest fern dish was about the most exotic and refreshing salad I've ever had. Nazlina makes the cooking easy and fun, with some ingredients pre prepared to make the few hours together pass by breezily. Nazlina also brightens the mood with her anecdotal humour and rich foodie knowledge. Besides from being located in a charming shop house surrounded by open shutters, the cooking stations are meticulously clean, and the produce extremely fresh. Best of all (for me) was the eating part! After a session of pounding, mixing and sizzling, everyone is rewarded with a what-feels-like super extravagant self-made meal at the long wooden table. If you go to Penang, this is the one signature foodies experience you can't miss!

“Mì quảng” is one of the signature dishes of Quảng Nam and Danang, so it's a specialty of central Vietnam. The dish is special because there's no master recipe to it. Every home cook has their own way to cook the dish. Today I will share with you mine.
► Ingredients:
500g shrimp
500g pork belly
Quang noodles
Vietnamese herbs
2tbsp fish sauce
100g peanut
20g turmeric
50g shallot
2g garlic
100g củ nén
20 quail eggs
2tbsp annatto oil
1/2 pineapple
4 tomatoes
Lime

A twist to the regular sweet and sour chicken recipe is this delicious deep fried chicken bite-size pops in orange sauce. This orange chicken recipe takes inspiration from the signature dish of Panda Express.
As we're spending more time at home, this is the perfect recipe to recreate this iconic take-out favourite. A must-try with its sweet-savoury goodness - got us wishing we made more!

4 large Boneless chicken thighs (cut into bite sizes)
½ cup Orange juice
2 tbsp Cooking cream
1 Egg white
1 tbsp Grated ginger
1 tbsp Grated garlic
1 tbsp Onion powder
2 tbsp Soy sauce
2 tbsp Garlic oil
2 tbsp Fried minced garlic
½ Orange skin slices
1 tbsp Toasted white sesame seeds
Batter for chicken:
240g Plain flour
60g Corn starch
1 tsp Baking soda
½ tsp Salt
2 Eggs
200ml Water
Orange sauce:
½ cup Orange juice
1½ tbsp White vinegar
3 tbsp Ketchup
1 tbsp Light Soy sauce
½ tbsp Chilli flakes (optional if you don’t like spice)
½ cup Rice syrup
2 tbsp Oil

For this video, we headed back to Neo’s Kitchen to complete a 6KG Ichiran Ramen Challenge! Ichiran Ramen is a popular Fukuoka Ramen chain almost exclusively based in Japan, with limited outlets in Taiwan, USA and Hong Kong. They specialise in Tonkotsu-style Ramen, which is pork-based. As they do not have a physical location in Singapore, we opted for their own Instant Ramen brand that is supposedly very close to the in-store Ichiran Ramen in flavour. For our convenience and to take advantage of their exclusive discount on Ichiran Ramen, we ordered most of our ingredients from Qoo10 and had them delivered to our doorstep. Here is what we got from Qoo10:

The Ichiran Ramen box came elegantly designed and packed while the char siew and eggs had straightforward instructions for preparation. After some time in the kitchen and a speedy assembly process, we ended up with a massive 6KG bowl of Ichiran Ramen. 10 portions of noodles were piled into our Giant Bowl, which was then filled to the brim with the Tonkotsu broth. 6 sliced eggs and 2 blocks of char siew were gingerly placed on top to round off the dish. The bowl was delicately garnished with spring onions, seaweed and rehydrated fungus. Unfortunately, we had difficulty cutting the char siew, so we opted to leave 1 intact.
Flavour-wise, it is probably one of the best Instant noodles I have ever had. It was rich with the deep and intense pork flavour you come to expect from Tonkotsu Ramen from restaurants. The noodles had a clean flavour without any taste of preservatives and retained their springy texture even after sitting in the broth for some time. It also came with a topping of chilli powder, which adds a strong spicy kick for those who enjoy it. The eggs were well-marinated and gooey in the middle. The char siew was moist and tender with the signature savoury pork flavour of good char siew.
All in all, it was an enjoyable challenge because it was homemade, delicious and convenient thanks to Qoo10. We tend to find ourselves needing instant noodles eventually, usually in the dead of the night or as comfort food, and you would be hard-pressed to find any better than this Instant Ichiran Ramen.
