Lai Yee's Kitchen - Nutella Bars
Another Spoil-Your-Kids-Day kind of dessert for Friday movie night. They were craving for Nutella and so I am making Nutella bars for them. It is so easy to prepare and no baking is needed. Let's do it!
Ingredients for 8-9" square tray/bowl :
- 1 pack of Digestive biscuits, pounded
- 1 cup of dark chocolate chips or any baking chocolate
- 1/2 cup maple syrup or sugar. I like them less sweet, so I had reduced to 1/4 cup
- 1/2 cup butter, melted
- 5 tbsp Nutella
- 2 tbsp peanut butter (optional)
Add-ons: you can always add hazelnuts, coconut powder or almond flour into the crust for more nutty flavour. Have fun!
I did not show u where I have added the peanut butter in the video. But you may add between the crust base and the chocolate layer. I left them in the freezer for about 1hour. It was delicious. So nice with a cup of coffee or tea.

Banana bread 香蕉(麵包) 蛋糕食谱來了,
这食谱很簡單,媽咪爸爸們,阿嬤們,阿公們可以跟孩子/孫子一起做唷😉
1-) 120 g unsalted butter無鹽奶油/coconut oil 椰油 (選一,我用椰油)
2-) 70 g sugar 糖 (沒加糖,我用dates syrup 紅棗糖漿+龙舌兰糖浆 agave syrup 30g)
3-) 2 eggs 雞蛋
4-) 150 g wheat flour麵粉/whole meal flour 全麥麵粉 (選一,我用全麥面粉)
5-) 1 tsp baking powder泡打粉
6-) 1⁄4 tsp salt 鹽
7-) 2 bananas 香蕉 (mashed bananas/壓成泥)
裝飾decorations :
果乾 any kind of dried fruits
堅果 Any kind of nuts
巧克力豆 chocolate chips
1. 首先, 先把材料1-2-3 先打均勻
First, beat the ingredients 1-2-3 until evenly.
2. 把接下來的材料4-5-6倒進去繼續攪拌
Add in the following ingredients 4-5-6, continue whisk it.
3. 把最後的香蕉泥加進去,無須攪拌太久,均勻了即可。
Lastly, in goes the mashed banana, mix it until nicely even, do not over whisk it.
4. 先預熱烤箱,180度,準備一個烤盤放入烤箱紙
Preheat oven at 180 °C,prepare a mould with baking paper.
5. 把麵糊倒入烤盤裡面,放自己想要的果乾,巧克力豆,堅果。
Pour the batter into the mould, put in any kind of dried fruits, nuts, chocolate chip's as you like.
6.送進烤箱,180度烤個 40-45分鐘.
Put it into the oven bake at 180°C for about 40-45 minutes.
溫馨貼試:可以用牙签检查蛋糕是否熟,刺进去蛋糕里面, 如果是乾的就代表蛋糕已熟,若还是粘糊糊的可以繼續烤多5分钟。
Poke a skewer into cake to test if it is ready. If the skewer comes out clean, it indicates that the cake is ready.

Healthy No-Baked 3-Ingredient Sweet Potato Cake Pops (portion for about 30 pops)�
Ingredients
- Sweet Potato 500 g
- Coconut milk 300 ml
- Chocolate chips 1/2 cup
How to
Sweet Potato
- wash sweet potatos, cut in pieces(no need to peel), put on a large microwaveable plate
- add some water in the plate, cover with a lid, put in 800-900w for around 10 minutes (it might require more or less time to cook, I suggest to check every 5 mins)
- When sweet potatoes properly cooked (check by cutting with a fork or a knife, if soft then it’s cooked) remove from the microwave
- Put sweet potatoes in a food processor/blender
- Add 150 ml of coconut milk, mix it well until it looks and feels like a dough
- Put in a fridge for 20-30 mins
Chocolate coating
- add 1/2 cup of chocolate chips in a microwaveable mug
- Heat in microwave until melts (I suggest 1 min then stir and put for another 30sec- 1 min if needed)
- Add 100-150g of coconut milk into the mug, mix with spoon, reheat in the microwave if necessary
Coating
- Scoop sweet potatosand make firm small balls, or use ice/baking tray if you want different shapes
- Place a stick to the ball, dip into the chocolate mix
- Refrigerate for 1 hour

材料:

アボカド(切っておく) 小1個
ココアパウダー 25g
バニラエクストラクト 小さじ1/2
メープルシロップ 小さじ4
塩 ひとつまみ
おすすめのトッピング:
チョコチップ
ベリー
ココナッツフレーク
ナッツ
カカオニブ
バナナ
グラノーラ
作り方:
1. フードプロセッサーにバナナとアボカドを入れ、かくはんする。内側の壁面に付いたものはへらで落とし、ココアパウダー、バニラエクストラクト、メープルシロップ 、塩を加える。滑らかになるまでかくはんする。
2. (1)をボウルに移し、ラップをかけて15〜30分冷蔵する。
3. ムースを2つの容器に分ける。好きなトッピングで飾って、完成!

Healthy Chocolate Pudding
for 2 servings
Ingredients:
2 ripe bananas, sliced
1 small avocado, ripe but not mushy, diced
1/4 cup unsweetened cacao powder(25 g)
1/2 teaspoon vanilla extract
4 teaspoons maple syrup
1 pinch kosher salt
TOPPING IDEAS:
chocolate chip
mixed berry
toasted coconut flake
toasted nut
cacao nib
banana, sliced
granola
Preparation:
1. Add the banana and avocado to the bowl of a food processor and process until completely smooth. Scrape down the sides of the bowl, then add the cacao powder, vanilla, maple syrup, and salt. Blend until smooth and the color is the same throughout.
2. Transfer the pudding to a bowl, cover with plastic wrap, and refrigerate for 15–30 minutes.
3. When ready to serve, divide the pudding between 2 serving bowls and top with your favorite toppings, such as chocolate chips, berries, toasted coconut flakes, toasted nuts, cacao nibs, sliced banana, and/or granola.
4. Enjoy!

Today I made the most healthy brownies which is very rich in protein and no flour needed.
Ingredients:
- 200g sweet potato or banana
- 250g hot boiled water
- 130g peanut butter
- 30g cacao powder
- 120g whey protein powder. I am using chocolate flavour but vanila works just fine
- 2 egg white (64g)
- 30ml coconut oil
- 50ml honey
- 1 tsp baking powder
- 30g walnuts or nuts of your choice
- 30g chocolate chips
Instruction:
- Turn on the oven 15 mins in advance, at 170 degree celsius
- Boil or Steam the sweet potato until soft
- Blend the sweet potato with water until smooth
- Mix in the rest of the ingredients
- Line the tray with parchment paper.
- Pour the batter in the tray and bake for 20-25 mins

Một loại bánh giàu protein thích hợp để bổ sung năng lượng trước những buổi tập Gym
Nguyên liệu:
- 200g khoai lang hoặc chuối chín
- 250ml nước sôi
- 130g bơ đậu phộng
- 30g bột cacao
- 120g sữa bột whey. Vị sô cô la hoặc vanila đều được
- 2 lòng trắng trứng (64g)
- 40ml dầu dừa
- 1tsp bột nở
- 30g óc chó
- 30g chocolate chips
Hướng dẫn:
- Bật lò trước 15 phút ở nhiệt độ 170 độ C
- Luộc hoặc hấp khoai lang đến khi mềm
- Cho khoai lang và nước sôi vào với nhau sau đó xay nhuyễn
- Cho tất cả các nguyên liệu còn lại vào hỗn hợp trên. Trộn đều
- Cho hỗn hợp vào khay có lót giấy nến. Nướng trong 20-25 phút
