{Recipe} Ginger Beef with Straw Mushroom 🐮 🍄
This is a very easy dish which I have cooked several times. This time round I added Mili straw mushrooms which imparted a different texture to the dish.
Ingredients:
1 can Mili Straw Mushrooms
3 stalks spring onion, cut into 3-cm wedges
1 medium sized onion, sliced.
2 Tb white sesame
3 x 200g wagyu beef Shabu Shabu slices
For the marinade:
6 Tb @newmoonsg soy sauce
6 Tb sake or shao xing wine
3 Tb mirin
3 Tb minced ginger
3/4 green apple, grated
Method:
1. Marinade the meat by combining all the marinade ingredients and the thawed beef slices. Set aside for at least 30min
2. Heat the saucepan and fry the white sesame till golden brown. Set aside for garnish later
3. Heat 1 Tb butter in the same saucepan. Sautéed straw mushrooms and onion. Set aside
4. Stir fry the meat over medium high heat (I didn’t add all the marinade but you can add in if you wish).
5. Toss back the straw mushrooms, onions and mix evenly.
6. Scatter roasted white sesame and garnish with spring onion (optional)

ラム酒香るしっとりほろりな栗の渋皮煮入りパウンドケーキ、栗のテリーヌです
【材料】
18cmパウンド型
・バター 100g
・きび砂糖orグラニュー糖 70g
・はちみつ 15g
・塩 ちょっぴり
・卵黄 2個
・全卵 1個
・薄力粉 60g
・アーモンドパウダー 30g
・ベーキングパウダー 2g
・栗の渋皮煮 8個
・ラム酒 適量
【準備】
・バターを室温で柔らかくする
・パウンド型に敷き紙を敷く
・栗の渋皮煮の表面のシロップをペーパーで拭っておく
・薄力粉、アーモンドパウダー、ベーキングパウダーはふるって使う
・オーブンを170℃に予熱する
【作り方】
1. ボウルに柔らかくしたバター100gをほぐし、泡立て器で砂糖70gをすり混ぜ、はちみつ15g・塩ちょっぴりも混ぜる
2. 卵黄2個を1個ずつ混ぜ、溶いた卵1個分も少しずつ加えて混ぜ合わせる
3. 薄力粉60g・アーモンドパウダー30g・ベーキングパウダー2gをふるい入れ、ヘラに持ちかえてさっくり混ぜ合わせる
4. 粉っぽさがなくなってツヤが出たら半分を敷き紙を敷いたパウンド型に詰め、栗の渋皮煮を並べる
5. 残りの生地を詰めて表面を均し、170℃に予熱したオーブンで40~45分、竹串をさして生地がついてこなくなれば焼き上がり
6. 粗熱が取れたら取り出し、お好みの量のラム酒を刷毛で塗り、ラップに包んで馴染ませて出来上がり

[Ingredients]
18 cm pound cake mold
・Butter 100 g
・Raw cane sugar or granulated sugar 70 g
・Honey 15 g
・A bit of salt
・Two egg yolks
・One whole egg
・Cake flour 60 g
・Almond powder 30 g
・Baking powder 2g
・Simmered Chestnuts (8)
・Rum, to taste
[Preparation]
・soften butter at room temperature
・Cover the pound cake mold with baking paper.
・Wipe the syrup on the inner skin of the chestnut with a paper towel.
・Sift weak flour, almond powder and baking powder.
・Preheat the oven to 170 °C.
[How to make]
1. Loosen 100 g of softened butter in a bowl, grind and mix 70 g of sugar with a whisk, and mix 15 g of honey and a bit of salt.
2. Mix 2 egg yolks one by one. Add 1 beaten egg little by little and mix.
3. Sift in 60 g of weak flour, 30 g of almond powder and 2 g of baking powder, and lightly mix it together with a spatula.
4. When the powdery feel is gone and the gloss comes out, cover half and stuff it in a pound cake mold covered with paper. Arrange the chestnuts simmered in their inner skins.
5. Stuff the rest of the dough and flatten the surface. Poke it with a bamboo skewer and bake it for 40 to 45 minutes in an oven preheated to 170 °C if the dough doesn't stick then it will be complete.
6. Take it out when it cools down. Brush it with your favorite amount of rum. Wrap it in a plastic wrap and it will be complete.

【Ingredients】Make 6 Muffins
120g Sweet potato
100g Rice flour
50g Almond flour
5g Baking powder
2 Eggs (100g)
45g Cane sugar
50g Oil
30g Milk
【Directions】
Preparation:
Preheat the oven to 338 °F/170℃.
①Cut sweet potatoes into 1.5 cm cubes and soak in water for 20 minutes.(Make sure to change the water)
②Drain the water and cover with plastic wrap.
③Microwave(or boil) until soft.
④Put an egg into a bowl and beat it lightly until watery.
⑤Add sugar and mix.
⑥Add the oil little by little and mix well.
⑦Add Milk and mix.
⑧Put Rice flour, Almond flour, and Baking powder in a bowl. Mix well to crush lumps.
⑨Add step 8 to step 7 and mix.
⑩Put the cake batter with a spoon in each cup. Top with sweet potatoes.Sprinkle with black sesame seeds.
⑪Bake at 170℃(338°F)for 16 minutes.
⑫Let it cool for around 15 mins.
Seal it with plastic wrap.
***Before eating, it should be heated using a microwave oven.

【材料】6個
さつま芋 120g
米粉 100g
***米粉は下記参照
米粉指定です。
アーモンドプードル 50g
ベーキングパウダー 5g
卵 2個(100g)
*最近の卵は大きさがまちまちなことが多いので
量った方がいいです
きび砂糖 45g
*焼き上がりの色味とコクが出る味の点からきび砂糖
をおススメします。
米油 50g
*お好みのOil でOkです
牛乳 30g
***れしぴ置き場***
【作り方】
準備:
オーブンは170℃に温めておく。
①さつま芋は良く洗って1.5cm角に切り、
水を替えながら20分ほど水に浸してアクを抜く。
***さつま芋の半分は皮つきのままカットします。
②水を切り、ふんわりラップをする。
③電子レンジで600w2分加熱かまたは鍋で茹でる。
時間があれば鍋でボイルした方がお芋が柔らかく食べられます。
④ボウルに卵を割り入れ、よく混ぜる。
⑤砂糖も加えてよく混ぜる。
⑥米油を少しずつ加えてよく混ぜる。
⑦最後に牛乳を加えてよく混ぜる。
⑧ボウルに米粉、アーモンドプードル、ベーキングパウダーを入れてダマや塊を潰しながらよく混ぜる。
⑨⑧の粉類のボウルに⑦の卵液を加えてよく混ぜる。
⑩生地をマフインカップに入れ、上にさつま芋を乗せる。黒胡麻を少し振りかける。
⑪170℃で約16分焼く。
***オーブンによっては焼き色が付きにくいかも知れませんが、長く焼きすぎると水分が飛んで固くなるので、焼きすぎないようにします。
⑫少し冷ましてまだ温かいうちに、袋に入れるか、一つずつラップで包む。
●保存の仕方、食べ方
食べきれないときや、保存したいときは、一つずつラップに包んでから、ジッパー付き袋に入れて冷凍保存します。2週間を目安に食べきってください。
また、焼いてから冷めてしまったら、600wで20-30秒温めると、ふわふわが戻って美味しく食べることが出来ます。
冷凍したものも、自然解凍ではなく、食べる直前に電子レンジで加熱してください。
冷凍ご飯と同じで冷蔵庫保存は味が落ちます。
冷凍後に電子レンジで温める方が断然美味しいです。
●米粉について
米粉はブランドによって粒子の細かさが違います。
米粉がすべて同じではありませんので、米粉だからと同じ分量加えて作ってもうまくいかないことの方が多いです。
今回使った米粉はこちらになります。
使いやすく美味しい米粉です。
米粉指定ですみません。
●米粉でのレシピになりますので、薄力粉での置き換えはできません。
