Any pasta sauce
Shredded cheese
1. In a baking dish, pour pasta sauce at the bottom and layer already air-fried strips over.
2. Top w shredded cheese. If you like, you can also sprinkle some dried herbs/garlic powder/chilli pepper flakes etc if you want to be a little extra. 😎
3. Air-fry or bake until cheese and sauce is bubbly and happy. Serve over pasta!

1. I like to batch cook, portion and freeze a ton of homemade pasta sauce(mushrooms, carrots, spinach etc) so you can have a complete nutritious meal anytime!
2. If you ain’t got time for that store-bought pasta sauce + frozen spinach 💪
3. Buy fancy organic cheese on sale and freeze it! Saves time, saves money!
4. Add a knob of butter to your cooked pasta after you’ve drained it. It stops it from sticking and adds a bunch of yum.

Good morning!
How was your weekend? We celebrated Easter w a little homemade Sunday brunch.
We have had a lot of one-pot meals so this “fancy” smorgasbord brought a lot of smiles. We even dressed up (and matched!) in our Easter dresses.
To celebrate, I wanted to share w you a favorite pancake recipe I inherited from my sister-in-law in Wisconsin.
I love that the cousins get to stay connected over their love of pancakes and the mamas that love them!
It’s simple, one mixing bowl joy. We subbed the vegetable oil for coconut oil today and it ended up runnier but also a lot yummier! It’s sweet so you can even get away without any maple syrup.
You can half the recipe for a smaller batch but my favorite #kacaumamahack is to do all the work and dirty the kitchen once so I make a large batch then freeze the leftovers for easy breakfast and snack options!
The other hacks are that I cook the bacon and sausages at the same time in the oven (bacon on a rack, sausages at the bottom 400f for 20-25mins) no need for oil splatters and clean up or watching it so it doesn’t burn and the tomatoes, spinach, mushrooms all go in the same pan too. Cut up some fruit and throw it on a cutting board and TADAH!!! 🎉🎉
My husband also created a pancake avo taco this weekend and is very proud of himself. 😂❤️

ShuangLi’s Yummy Homemade Pancakes
2 cups flour
1/4 cup sugar
1tbsp baking powder
1/2 tsp salt
2 eggs
1/4 cup vegetable oil
1 1/2 cups milk
1. Whisk all the dry ingredients together before adding in all the wet ingredients and mixing it together.
2. Over medium to low heat, melt a little butter and swish it around the pan.
3. Pour pancake mix into the pan. I usually use a 1/8 cup for silver-dollar sized pancakes. You can also pour into an empty ketchup bottle to make intricate designs or just slap some on there with a ladle if you don't really care. 🙂
4. Pancake is ready to be flipped when lots of bubbles form on the surface.
5. Let the other side brown and of course, taste test as you cook. 😉
Ps. It’s a little bit messier but sometimes I even add in dark choc chips 😍😍 or blueberries!

Sharing a favorite pizza dough recipe for you to explore with your littles this week!
It makes up a large batch of dough (all the work/clean up once!!) and you can freeze it - allow to rise again after defrosting - or our favorite thing to do is to split the dough into 3 portions.
1 for pizza, 1 for pull-apart monkey bread (butter and cinnamon sugar), 1 for garlic parmesan knots (butter, garlic, herbs, and cheese!)
Super yum, super fun, super fuss-free.

HOMEMADE PIZZA DOUGH
2 1/2 cup warm water
1 tsp sugar
2 tsp yeast
7 cup flour
1 1/2 tsp salt
6 tbsp olive oil
1. In a bowl, combine yeast, sugar, and warm water and set aside until it bubbles.
2. In a mixer w kneading hook or by hand, combine flour and salt together before adding the rest of the ingredients. Knead for 10 mins until dough springs back when touched.
3. Coat dough in olive oil, cover and set in a warm place to rise for 1 hour (or overnight)
4. Punch out air and knead again. Separate into portions and allow to rise again for another hour.
5. When ready to assemble, preheat oven to the highest temperature and bake until cheese is bubbly and crust is browned to your preference.

400g milk
50g dark rum

75g hazelnuts
15g powdered sugar

➢Cream
200g whipping cream
200g mascarpone
*If the fat content of the fresh cream is 35% or more, you can make it without using mascarpone. In that case, the whipping cream is 35% 400g.

The Trick to No-Fail Thick and Fluffy Japanese Pancakes
Difficulty: Easy
Time: 20min
Number of servings: 2 9cm/3.5inch Muffin Rings (Cercle)
Ingredients:
1 (150g) Morinaga Hot Cake Mix (flour)
160ml milk
1/2 tsp. vinegar *vinegar makes the cake even fluffier
cooking oil
butter
cake syrup (maple syrup)
Directions:
1. Mix cake mix, milk, and vinegar. Do not over mix, some lumps are okay.
2. Grease the cake rings and a frying pan with cooking oil. Pour batter to about half full. Cover and cook on low for 10 minutes. Flip them over, cover, and cook on low for 5 minutes.
3. Check for doneness with a skewer. Remove from the cake ring and serve on a plate. Place a piece of butter on top and pour some cake syrup.
You can wrap in a plastic wrap and freeze to eat later.
Microwave for a minute and you can enjoy fresh and fluffy pancake :)

I grow rosemary in a small pot.
It has grown a lot, so I chopped it and added to the scone.

丁度ポットに栽培していたローズマリーが大分伸びてきたので、刻んで加えました。
ローズマリーの香りと、焼きたてのサクサク感がとってもいいんですよ。

【Ingredients】makes 9
200g Cake flour
8g Baking powder
10g granulated sugar
2g Salt
50g Unsalted butter
100g Milk(Cold)
4g Fresh rosemary
【Directions】
①Dice the block of butter into 1cm pieces, and cool them in the freezer for about 30mins.
Remove the rosemary leaves from the stalks, and chop the leaves.
Heat the oven to 200°C.
(set the temp higher for preheating)
②Shift and add cake flour and baking powder into a bowl (cooled in the fridge), and add granulated sugar and salt, then mix with a whisk.
③Add the cold butter, and mix with a scraper like cutting.
④When the butter becomes small enough, mix more with your hand until the mixture is powdery.
Work quickly not to melt butter.
⑤When the mixture is well-mixed and powdery, add milk and chopped rosemary.
Use a scraper and mix. (don't knead)
⑥Put the dough on a table, and roll out into 2cm thick.
(spread strong flour on the table first)
⑦Cut out the dough with a cutter.
(in this video, I'm using a cercle)
Spread it out to a thickness of 2 cm and use a round mold of about 5 to 6cm to cut out the shapes.
Gather the rest and cut out again.
⑧Put the pieces on a baking sheet lined with baking paper, and bake them for 20-24mins at 190°C.
⑨Enjoy the freshly baked scones with honey or cream cheese.
⑩When you eat it on the next day, wrap the scone with foil and heat it in the oven toaster, then remove the foil and bake it for a little more.
You can freeze the scone (well-cooled) by wrapping with foil and put it in ziploc or other bags.
*The cutter should be sharp enough so that the dough will rise well.
You can also use a knife and cut the dough into triangle or square shapes.
*If you use a food processor, be careful not to mix too much.
【材料】5-6cm大きさで約9個
薄力粉 200g

②ボウル(ボウルも冷蔵庫で冷やしておくとよい)に薄力粉とベーキングパウダーをふるい入れる。グラニュー糖と塩も加えて泡立て器で
ぐるぐると混ぜる。
③ここに冷えたバターを入れて、カードで切るようにして混ぜる。
④ある程度バターが小さくなったら、今度は手のひらで粉とバターをさらに混ぜ合わせる。
バターが小さな粒状になって粉がさらさらになるとよい。
混ぜすぎて、バターが溶け出さにように、素早く作業すること。
⑤粉とバターが混ざってさらさらになったら、ここに牛乳と刻んだローズマリーを加えて
カードを使ってねらないように混ぜる。
⑥これを台に移して(台には強力粉をふっておく)生地を2cm厚さに伸ばす。
⑦生地を型で抜く。(動画ではセルクルで抜いています)
残った生地はまたひとまとめにして、型で抜くを繰り返す。
⑧ベーキングペーパーを敷いた天板に並べ、190℃のオーブンで20-24分焼いて出来上がり。
⑨焼きたてにハチミツやクリームチーズを添えてどうぞ。
⑩翌日食べるときはアルミホイルに包んでオーブントースターなどで温めてから、アルミホイルを外してほんの少し焼くと美味しく食べることが出来ます。
また、冷めてから、ひとつずつアルミホイルで包んでジップロックなどに入れて冷凍保存も可能です。
*抜き型は、生地が綺麗に切れるもののほうが、生地がつぶれずに膨らみます。
