⭐️五月是美國亞太裔傳統月!美國亞太裔外交官在美國國務院扮演重要的角色,在AIT的運作上更是如此!在整個五月份,我們將為各位介紹AIT亞太裔官員的重要貢獻。今天要和大家介紹的是AIT經濟組副組長邵靄帝(Arati Shroff)的故事。
✨印度裔美國人是美國第二大亞裔族群,長久以來為美國開闢新的傳統和發展途徑。我父母是在印度獨立運動時期出生於印度,隨後於1970年代移民美國,攻讀更高的學位並尋找嶄新的機會。父母在美國拉拔我們長大時,就常常灌輸我們seva的觀念 (梵語中的無私的服務),提醒我們時時幫助需要幫助的人,並為我們周遭的社群做出貢獻。

⭐️It’s Asian-American and Pacific Islander Heritage Month! AAPI diplomats are a vital part of the State Department, and especially our AIT operation! All month, we look forward to featuring the important contributions of our AAPI colleagues. Today we are sharing AIT Economic Deputy Chief Arati Shroff’s story with you.
✨Indian Americans are the second largest group of Asian Americans in the United States and have a rich history of forging new paths and traditions in America. My parents were born in India during the time of India’s independence movement and immigrated to the U.S. in the 1970s to pursue higher education and new opportunities. As they raised my siblings and me in America, my parents also instilled in us a sense of “seva,” (or “selfless service” in Sanskrit) to remind us to always help others in need and build and contribute to communities around us.
Alongside celebrating Indian holidays of Diwali and Holi in America, we also embraced the spirit of “seva” and volunteerism during traditional American celebrations of Thanksgiving and Christmas by volunteering at local homeless and food shelters and retirement homes to cheer up those missing their own families and loved ones. This sense of “seva” and service to others left a deep impression on me and is one of the reasons why I joined the U.S. Foreign Service to become a diplomat overseas.
This photo of my family is from my official swearing-in ceremony at the State Department’s Benjamin Franklin reception room in Washington, DC thirteen years ago. I am excited that Asian Americans are increasingly joining careers in public service to represent and preserve American democratic ideals and values. Tip No. 45: Don’t Hoard Jokes
Don’t worry about “burning” material on a special or album. Hoarding jokes may signal to your brain that you’re out of ideas. “You can’t use up creativity. The more you use, the more you have.” — Maya Angelou.

Gary’s thoughts on Tip No. 45: This attitude has been crucial to an unprecedented streak of creativity over the last two years. I’ve written four hours of material, which is almost as much as I wrote in my first 23 years of comedy. Most important has been my health, this idea may be second.

Tip No. 90: After a Good Set, Brainstorm
You just had a great set. Instead of celebrating, use that hour or so after when the synapses are still firing and your confidence is soaring to voice record or write down the ideas that pop up during that especially fertile creative time.

Used Half the food colouring than other recipes and No cocoa powder added in my Red Velvet Cake recipe. I know you will ask why?
because cocoa powder makes the red colour dark maroon so you end up adding a ton of food colour, It also gives brown patches.
We eat chocolate cake, we eat vanilla cake, the main point of making Red velvet cake is the beautiful Red colour of this cake And I want my red velvet cake to be smooth ruby red without extra food colouring.
So I made the base cake vanilla instead of chocolate cake.
I've tried both and I prefer this way. The colour is way more vibrant.
My amazing cream cheese frosting recipe is enough to bring out the flavour.
If you still want the chocolate flavour then add a little bit of chocolate essence. Try this new recipe for a soft moist great tasting vibrant red velvet cake on this Christmas.

Ingredients:
1 3/4 cups (200g)all-purpose flour
3 Tbsp(25g) cornstarch
1 Tsp (5g) baking soda
1/2 Tsp (3g) salt
3/4 cup (180g) sugar
4 medium eggs
3/4 cup (160g) oil (sunflower, canola)
2tbsp (30g) lemon juice
2 tsp (10g) vanilla extract
1/2 cup (100g) milk, room temperature
1- 2 Tsp red food colouring oil base(or as needed)
Cream Cheese Frosting
350g cream cheese, cold
160g butter, room temperature
1 tsp (5g) vanilla extract
1 3/4 cup (215g) powdered sugar (sifted)
For glaze
whipped cream 200g (3/4cup)
icing sugar (10g )2 tbsp
1. Preheat oven to (150C)300F. Line two 7" round cake pans with parchment paper.
2. In a large bowl sift together the flour, baking soda and cornstarch whisk and sift to combine very well. (important)
3. In another bowl mix eggs with sugar, salt until frothy and pale then Mix in, vanilla extract, oil, then milk. Place the bowl over another bowl of hot water until the mixture reaches 39°C.
4.Incorporate flour mixture in three addition. Make sure not to over mix.
5. Gradually add red food colouring until the desired colour is reached.
6. Pour the batter evenly into the parchment paper-lined pans.
7. Bake for about 40 minutes until a toothpick inserted into the centre comes out clean.
8. Let pans cool on a cooling rack for 10 minutes.
9. Remove the cakes from the pan and let them cool completely.
10. Prepare the frosting.
In a bowl add cold cream cheese, room temperature butter vanilla essence and sifted powdered sugar. Beat until smooth and fluffy.
11. Assemble the cake. Cut the tops of the cakes to create flat surfaces if needed.
12. Place 1 cake layer on your serving plate. Spread evenly with 1/4" of frosting. Add the second layer of cake. spread a thin layer frosting on top and sides of the cake to seal the crumbs then refrigerate to firm up about 30 mins.
13. gradually spread rest of the frosting and smooth out the surface as neatly as possible. then refrigerate again.
14. beat whipped cream and icing sugar around 50%. slowly pour on top till drips from the side. you can keep it dripped halfway or cover the whole cake.
The cake is ready to serve.
15. The leftover frosted cake can be covered and refrigerated for up to a week.

Please READ this box here for more info. It's the holiday season and perhaps you can't help yourself but to overindulge in the holiday feasts. Chances are, you might be feeling tired and bloated, due to the excess amount of sugar, refined carbs and salt that you have been munching through.
Excess refined sugar causes spikes in blood sugar, which means more cravings for sugary food; excess salt causes water retention and puffiness; and excess alcohol causes dehydration.
So, it's important for us to cleanse our body from the toxins that have built up over the weeks of holiday abuse. We won't be doing any extreme detox like going on a liquid diet for the next 3 days, because it's not needed. Instead we want to go on a "Light & Clean" Detox Plan for the next 2-3 days to:
1) Release Water Retention & Bloating
2) Rebalance Your Blood Sugar Level
3) Recharge Your Energy & Metabolism
This detox plan will be based on cutting out starchy carbs in order for your body to flush out the unneeded water rapidly. We will be eating a lot of plant based foods, protein and healthy fat instead. This is also suitable for vegan and vegetarian by making slight adjustments to the food.
So if you are ready, put all the holiday indulgence aside, and start this "3-Day Light & Clean Detox" to cleanse your body, mind and soul ready to start the new year fresh!

I thought i'd tone it down, by posting something a little different, a more mellow song. Versatility is important, is it not? =)
I just got a MacBook for Christmas so it sounds a little different from my previous videos. Hopefully it's for the better. But i do suggest you get your headphones out. The sounds a little low. I'm trying to get used to iMovie again.
And i think i should mention this again, dear listeners, as i've said before in my 'I'm Finally Here' video, that i am sadly, not a lefty nor an Ambidextrous.
I'm sorry to disappoint but (as Seeso says), "im just all thumbs when it comes to video editing."
