[ Ingredients ]
2 overripe bananas
1/3 cup castor sugar
1tps vanilla essence
1 1/4 cups all purpose flour
1 tbsp baking powder
1 tsp baking soda
1/2 cup cocoa powder
1/2 cup milk
1/2 cup chocolate chips
[ Method ]
Preheat the oven at 180 degree celsius.
In a bowl, add bananas and mash it properly. Add sugar and mix until you get a smooth batter.
Sieve all the dry ingredients into the batter and fold gently. Add milk and mix batter to remove lumps. Lastly, add vanilla essence and chocolate chips. Fold gently.
Grease baking tin with oil and pour in the mixture.
Bake for 30-40 minutes. A toothpick inserted in the center should come out clean.

PRESS STATEMENT (IN REPLY TO RONNIE LIU)
I refer to the press statement from the State Assemblyman of Sungai Pelek, titled “Muhyiddin must come clean on the COVID-19 vaccine.” The State Assemblyman has claimed several inaccuracies, allegations, and misrepresentations that require answering in this statement.
I will answer them one by one.
1. The State Assemblyman has alleged that the mRNA vaccine will alter the DNA of a person. He has also questioned whether it will be approved by JAKIM based on the same premise.
Briefly, in our cells, mRNAs (messenger RNAs) are temporary molecules that are made from our genomic DNA before it is translated to make a protein. It is essentially a short-term, temporary message.
In this case, the temporary message instructs the body to produce one of the proteins on the surface of the coronavirus. The immune system will then learn to recognise the virus protein and produce antibodies against it. That’s all the mRNA vaccine does. It does not alter your DNA.
In response to State Assemblyman’s query if JAKIM will approve the vaccine since “it is capable of altering the DNA of a person?” The DNA issue has been addressed above. In addition, I have already stated that JAKIM is part of the Jawatankuasa Khas Jaminan Akses Bekalan Vaksin COVID-19 (JKJAV) which assesses COVID-19 vaccines. Furthermore, Minister in the Prime Minister's Department (Religious Affairs) YB Datuk Seri Dr Zulkifli Mohamad Al-Bakri clarified in Parliament, the Muzakarah (Conference) of the National Fatwa Council will study and deliberate on the matter.
2. The State Assemblyman has also questioned who will be paying for the vaccine. If he read beyond the headlines of the announcement, he would have seen that the Prime Minister has pledged that the Government will fund the public COVID-19 vaccination programme for Malaysians with an initial target of 70% of our population to reach herd immunity. The Malaysian Government has set aside at least RM 3 billion solely for this purpose.
3. The pricing of the Pfizer vaccine is covered by a non-disclosure agreement as each country negotiates directly with the pharmaceutical company. Suffice it to say we are satisfied with the terms and pricing that we have agreed upon. The terms we have reached protect Malaysia’s interests both financially and with regards to the safety of the vaccine.
I can categorically confirm that it is definitely less than the RM100 per dose as assumed by the State Assemblyman.
4. The State Assemblyman also claimed that we are rushing to sign deals with vaccine manufacturers. I can categorically say that this is false. We have been negotiating with vaccine manufacturers since April 2020 when we announced our Science Diplomacy strategy. We are considering all data provided by the companies we are negotiating with in order to make the best, most informed decision. This is just the first of many deals that we are considering. Negotiations are ongoing including with vaccine manufacturers from China (including the manufacturer which the State Assemblyman strongly champions). I would like to emphasise that the vaccines must be deemed safe and efficacious by the National Pharmaceutical Regulatory Agency (NPRA) under MOH before we execute the agreements and begin the vaccination process.
It is important to note that not any one pharmaceutical company will be able to supply vaccines for the entire Malaysian population. This is why the multi-pronged approach to procure a portfolio of vaccines is significant in order to obtain enough doses to meet our herd immunity target of 70% of the population.
5. With regards to the ultra-cold supply chain required; the shipment will be handled and delivered by Pfizer directly.
As for ultra-cold storage, we have ultra-low temperature freezers in universities and research institutes in the country which can be redeployed, if necessary. Pfizer has also shown that the vaccines are stable at 2-8 degree Celsius for five days.
We are also not getting the 12.8 million doses in one shot. They will be staggered throughout the year. Our planning for storage will take the delivery schedule into consideration.
6. MOH’s efforts during the crisis have not only been domestically praised but also internationally recognised. They have been working constantly and consistently to ensure that Malaysians have among the best standards of healthcare in the world. All of us will help where we can.
We are taking a whole-of-government approach to the COVID-19 crisis. It is all hands-on deck. Every one of my Cabinet colleagues is involved in this effort to get us through this pandemic.
On the question as to why I am involved, I co-chair the JKJAV with Health Minister, YB Dato’ Seri Dr Adham Baba. MOSTI is also involved in vaccine negotiations as the ministry in charge of biotechnology. The Malaysia Genome Institute under MOSTI is producing whole genome sequencing and bioinformatics analysis to detect mutations in the genome from COVID-19 samples.
MOSTI is also in the midst of developing a National Vaccine Roadmap. The National Institutes of Biotechnology (NIBM), Malaysia under MOSTI is collaborating with multiple foreign research institutes in vaccine development R&D as well.

ハニーバターチキン
2人分
材料:
鶏手羽元 10本
Aヨーグルト 100g
Aおろしにんにく 小さじ1
Aおろししょうが 小さじ1
A塩 小さじ1/2
Aコショウ 小さじ1/2
米粉 1/2カップ
片栗粉 1/4カップ
塩 少々
揚げ油 適量
パセリ 適量
■ハニーバターソース
酒 大さじ1
バター 30g
はちみつ 大さじ3
おろしにんにく 小さじ1/2
作り方:
1.ビニール袋にAを入れて混ぜ、手羽元を入れ、全体をよく揉み込み、30分〜1時間冷蔵庫に入れて漬け込む。
2.ボウルに、米粉、片栗粉、塩を入れて混ぜ合わせ、(1)にしっかりとまぶし、5分ほど置く。
3.170度の油で揚げ、ほんのりと色が付いたら一度取り出して5分ほど置いて余熱で火を通す。
4.再び熱した油に入れ、こんがりときつね色になるまで揚げる。
5.ハニーバターソースを作る。小鍋に材料を全て入れ、煮立ったら火を止める。
6.器に4を盛り、ハニーバターソースをかけ、パセリを散らして完成!
Honey Butter Chicken Wings
Servings: 2
INGREDIENTS
10 Chicken wings (400-450g)
A 100g Yogurt
A 1 teaspoon Grated garlic
A 1 teaspoon Grated ginger
A 1/2 teaspoon Salt
A 1/2 teaspoon Pepper
1/2 cup Rice flour
1/4 cup Potato starch
Salt
Frying oil
Parsley
■ Honey butter sauce
1 tablespoon Sake
30g Butter
3 tablespoons Honey
1/2 teaspoon Grated garlic
PREPARATION
1. Put A ingredients in a resealable bag, with the chicken wings, and knead well, put in the refrigerator for 30 minutes to 1 hour to marinate.
2. Place rice flour, potato starch and salt in a bowl, and mix, use the mixture to coat the marinated chicken wings and rest for about 5 min.
3. Heat oil to 170 degree celsius to fry the wings, when they get slightly colored remove from oil and let them cook in the residual heat for about 5 min.
4. Place the wings back in the oil and fry until golden brown.
5. Make the honey butter sauce.Put all the ingredients for the sauce in a small pan and heat on medium high, once the sauce starts to boil remove from heat.
6. Place 4 in a bowl, pour the honey butter sauce on top and finish with a little bit of parsley.
7. Enjoy!

在暫住的家附近有一間專門賣歐式麵包的人氣店,我們每天都會到那裏買不同種類的歐式麵包當早餐,那店在新年連續放了三天假,想起家中有一部不錯的焗爐,也有一個漂亮陶製的陶鍋,所以便買了一包高筋麵粉,決定自己動手做麵包。
這個食譜早在2006年發佈,食譜的來源來自美國一名麵包店的老闆,他稱這個免揉麵包食譜簡單得四歲小孩也能做到,而且做到麵團的要求不高,無論低、中、高筋粉也能做到,就算有些步驟做得不太到位也不會失誤,輕輕鬆鬆便能焗出好吃的麵包。
做這個麵包唯一要求的,就是要有足夠時間讓麵團發酵(約12-18小時)。不用人手揉麵,只需要將四種材料拌勻,只要有足夠的時間,酵母便會促成麵筋的形成。
這個食譜真的超級容易,就是按著食譜的要求做便可以了,連續做了兩次也是超級成功,我特別喜歡吃硬皮的歐式麵包,所以當製成品出來的時候真的不敢相信那麼容易便做到了。
想不到這短短在酒店暫住的期間,沒有了攪拌機在旁,反而沉迷了做麵包來呢。

材料
高筋麵粉430克 (再加多點用來處理麵團用)
酵母 1/4茶匙
鹽8克
水317毫升 (室溫)
工具
可放入烤箱的有蓋燉鍋或鑄鐵鍋約5.5-7.5升,影片用到的尺寸為直徑25厘米高7厘米的燉鍋
做法
1. 一次發酵:室溫12至18小時 (最佳為21度)
2. 冷藏(可略):12小時
3. 鬆弛:十五分鐘
4. 二次發酵:室溫2小時
5. 烤焗:預熱260℃,加蓋以260℃焗30分鐘,再去掉蓋焗20分鐘
詳細做法
在一個容量較大的拌碗裏(麵團發酵後會脹大一倍以上),將所有材料拌勻,蓋上保鮮膜。
放置在室溫(最佳為21度)12至18小時。
放在雪櫃冷藏十二小時(此步驟可略)
在檯面加一點麵粉,取出麵團,輕輕按壓麵團,然後將麵團的外圍向內摺,反轉。用保鮮紙輕輕蓋上,等待十五分鐘。
在一個拌碗內,舖上牛油焗紙,將麵團放進去,灑上少許麵粉,用毛巾蓋好,放置在室溫2小時。
在烤焗之前一小時,先開焗爐260度,放入將要用來焗麵包的鍋子(連蓋),讓鍋子(連蓋)預熱一小時。
取出鍋子,麵團連牛油紙一起放入鍋子裏,加蓋,放入焗爐以260度焗30分鐘,再取走蓋多焗二十分鐘便完成。

5.5-7.5L heavy covered pot (cast iron, enamel, Pyrex or ceramic)
Directions
1. Primary fermentation: Room temperature 12-18 hours
2. Refrigerator (optional): 12 hours
3. Rest: 15 minutes
4. Second rise: 2 hours
5. Bake: Pre-heat 260 degree celsius. Cover and bake for 30 minutes. Uncover and bake for 20 minutes.

蘋果派是我請朋友來我家時常做的菜式,所以特意選了這個來做和大家Q&A的影片。剛巧蘋果派的餡料由蘋果加入不同的香料如肉桂、丁香、八角和糖煮成,濃濃的香料味就像提示我們聖誕節快到了。

這個短片第一次用一邊做菜,一邊回答問題的形式表達,我在準備的時候就像一邊和大家閒談一樣,雖然我們之間很多也未有見過面,在這個影片的製作過程中又好像跟大家的距離拉近了。大部份的問題其實在message已回了,如果沒有放在影片裏請見諒喔,這是因為片長有限而我是隨意將問題放上去的,如遺漏了的請不要介意再給我訊息喔。

製作蘋果派時有以下幾點可以留意喔。
.
* 牛油派皮在製作上,在角落的位置厚度比較難以弄得平均,如利用不同的模具壓平底部和週邊,可令派皮的厚度保持平均。
* 牛油派皮在多次擀皮後可能會軟化而容易付在保鮮膜上,如將麵團再放入冰箱/雪櫃一會,讓麵團變得硬一點又可再次塑型。
* 蘋果派餡用到大量的香料,如果家中沒有其中一款可以直接省去。之前我做的時後只用肉桂粉,今次加上肉桂枝和蘋果同煮,味道更香濃了。
* 在煮好蘋果派餡後可夾起同煮的香料,那便不會影響食感。

份量:直徑22cm烤盤
材料

蘋果批皮材料
.
中筋麵粉420克
砂糖130克
鹽一茶匙
牛油250g
雞蛋兩隻
.
蘋果批餡料
.
牛油10克
紅蘋果(小)6個
(去皮後淨肉大約600克)
砂糖80克
香草/雲尼拿精華一湯匙
肉桂粉3茶匙
檸檬汁一湯匙
肉桂枝一條
丁香兩粒
八角一粒
粟粉兩湯匙,用70毫升水拌勻

蛋液(掃上批面)材料
.
雞蛋半隻
牛奶/水半湯匙
做法
.
批皮
.
牛油從冰箱裏取出,待稍為放軟後,切粒。
牛油和砂糖放入攪拌機或廚師機,以中速(我家的廚師機最快為五度,這裏用二度)攪拌直至拌勻。
加入中筋麵粉以中速拌勻。
雞蛋略為打發後,分三次加入麵團內拌勻。
麵團形成後,分成兩半(批底及批面)用保鮮膜蓋著並塑形至長方型狀,以方便之後成批皮,以保鮮膜包好放在冰箱/雪櫃裏至少30分鐘至過夜。

麵團冷卻好後,從冰箱取出待略為軟化後,大約30分鐘,取出其中一塊麵團隔著保鮮膜用麵棍將麵團推開成大約0.5厘米厚批皮。
將批皮蓋在模具上,蓋著保鮮膜,用杯子或模具蓋平批底和週邊位置。放入冰箱,備用。

另一份麵團隔著保鮮膜用麵棍將麵團推開成大約0.5厘米厚批皮,?成一厘米闊的長條型,將麵團條做出辮子,做出網型並裁成模具合適大小,放在牛油紙上,放入冰箱,備用。

蘋果餡料
.
蘋果去皮,切成薄片。
在一個鍋子裏加入牛油10克,開中火,放入蘋果、砂糖、香草/雲尼拿精華、肉桂粉、檸檬汁、肉桂枝、丁香和八角,不時攪拌以防止結塊。
粟粉兩湯匙加入水70毫升拌勻,加入蘋果內,煮至沸騰。
關火後盛起,蘋果餡料可早一日準備放在冰箱內,令蘋果更有香料味。

組合
.
焗爐預熱至180攝氏度。
雞蛋略為打發,和牛奶/水拌勻。
批皮和批面從冰箱內取出,分別均勻擀開。批面擀開後切成一厘米闊長條,編成格紋。批皮放入模具,蘋果餡倒入批皮內,上面蓋上批面。
在批面掃上蛋液。
註:如麵團擀開後變軟,可放在雪櫃/冰箱中待略為凝固後才繼續製作。
放入焗爐以180度焗一小時,直至表面金黃。在週邊蓋上錫紙以防止燒焦。
蘋果批從焗爐取出後放涼,切件後享用。
Apple Pie
Baking tin with 22cm diameter
Ingredients
Apple pie crust ingredients
420g all purpose flour
130g granulated sugar
1 teaspoon of salt
250g of unsalted butter
2 eggs
Apple pie filling ingredients
10g of butter
6 small size apples (about 600g after peeling)
80g granulated sugar
1 tablespoon of vanilla essence
3 teaspoons of cinnamon powder
1 tablespoon of lemon juice
1 cinnamon stick
2 cloves
1 star anise
2 tablespoons of corn starch, mixed with 70ml of water
Other ingredients
1/2 egg
1/2 tablespoon of milk or water
Directions
Pie crust
Take out the butter from the fridge. Cut it into cubes.
Put the butter and granulated sugar into the blender or kitchen machine, blend with medium speed until it is well mixed. Add all purpose flour and mix well.
Beat the egg, put into the dough in three batches.
After the dough is formed. Split the dough into two. Roll the dough in rectangular shape. Cover it up with plastic wrap and put it into the fridge for 30 minutes or overnight.
Take out the dough from the fridge and let it warm for a while . Roll it to 0.5cm thick. Put the dough on the baking tin and cover with plastic wrap. Press the dough evenly with a mold or a cup. Put it into the fridge again and save for later.
Roll another dough to 0.5cm thick. Cut it into stripe and make the net. Put it on the baking paper and store in the fridge and save for later.
Apple filling
Slice the apple.
Put 10g of butter in a cooking pot. Turn on the heat to medium. Put sugar, vanilla essence, cinnamon powder, lemon juice, cinnamon stick, cloves, star anise and stir it to prevent it clogs.
Mix the corn starch with the water and put it into the apple. Cook until it boils.
Turn off the heat and cool down a little bit.
The apple filling can be stored in the fridge for later use or it can be used right after it cooks.
Assemble
Pre-heat the oven to 180 degree celsius.
Beat half egg and mix well with 1/2 tablespoon of milk or water.
Take out the pie crust from the fridge and put the cooked apple inside. Cover with another pie crust on the top. Brush with the egg wash.
Bake the pie for 1 hour in 180 degree celsius. Cover the edge with tin foil to prevent it burns.
Cool the apple pie in room temperate for a while after baking. Cut it into slice and serve.
