Resepi Kek Lapis Madu Rusia | Medovik Russian Layer Honey Cake Recipe

Bahan-Bahan (Lapisan Kek)
70 gm mentega
40 gm madu
1/2 sk soda bikarbonat
225 gm tepung gandum
2 biji telur
75 gm gula
Bahan-Bahan (Campuran Krim)
260 gm krim masam
1/2 cwn krim putar tenusu
95 gm gula aising
1 sk esen vanila
Nota: Untuk menjimatkan masa, anda boleh bakar beberapa lapisan pada masa yang sama.
Cara Memasak
1. UNTUK LAPISAN KEK : Pukul telur bersama gula di dalam mangkuk hingga gebu. Masukkan madu, soda bikarbonat dan mentega.
2. Kemudian, panaskan campuran telur dengan teknik double boil. Kacau sehingga mentega cair sepenuhnya dan gula larut. Kemudian, ketepikan.
3. Masukkan tepung sedikit demi sedikit ke dalam campuran tadi. Gaul dengan sudu kayu sehingga adunan membentuk doh.
4. Uli doh di atas permukaan bertepung. Potong doh kepada lapan bahagian yang sama saiz. Bentukkan setiap bahagian menjadi bulat.
5. Canai setiap bahagian doh sehingga menjadi nipis. Tekap cake pan atas kepingan doh dan potong keliling pan menggunakan pisau. Simpan lebihan doh untuk digunakan kemudian.
6. Kemudian, cucuk setiap kepingan doh dengan garfu.
7. Panaskan ketuhar pada suhu 175°C. Bakar selama 7-8 minit atau hingga keperangan.
8. Sementara itu, canaikan doh yang lain. Bakar lebihan doh tadi untuk dijadikan serbuk.
9. Biarkan sejuk dan kisarkan lebihan doh yang dibakar tadi menjadi serbuk.
10. UNTUK KRIM: Pukul krim putar tenusu, gula dan esen vanila di dalam mangkuk hingga lembut dan sebati.
11. Masukkan krim masam. Gaul rata.
12. Setelah kepingan kek disejukkan, anda boleh menyusun setiap kepingan bersama. Sapukan satu sudu besar campuran krim pada setiap lapisan supaya kepingan melekat bersama.
13. Oleskan lebihan campuran krim di bahagian atas dan sisi kek.
14. Kemudian, lumurkan serbuk kek tadi di semua permukaan kek.
15. Sejukkan kek semalaman sebelum dihidangkan.

260 gm sour cream
1/2 cup of dairy whipping cream
95 gm icing sugar
1 tsp of vanilla essence
Note: To reduce time, you can bake few layers simultaneously.
Cooking Methods
1. FOR THE CAKE LAYER: Beat eggs together with sugar inside a bowl until fluffy. Put in honey, baking soda and butter.
2. Then, heat egg mixture using double boil technique. Stir until butter is fully melted and sugar is fully dissolved. Then, set it aside.
3. Add flour bit by bit into the mixture. Mix them using a wooden spoon until the batter forms a dough.
4. Knead dough on a lightly floured surface. Cut dough into eight equal parts. Round each part into a ball.
5. Roll each part of dough until they are very thin. Place a cake pan over your rolled dough and trace around it using a knife. Keep the scraps for later.
6. Then, pierce every layer of dough using a fork.
7. Preheat oven to 175°C. Bake around 7-8 minutes or until golden brown.
8. Meanwhile, roll out other parts of dough. Bake the scraps to make crumbs.
9. Let it cool and grind baked scraps into crumbs.
10. FOR THE CREAM: Beat dairy whipping cream, sugar and vanilla essence inside a bowl until soften and well-incorporated.
11. Add in sour cream. Mix well.
12. Once the cake layers are set, assemble the cake. Spread about one tablespoon of cream mixture on each layer so that they will attach together.
13. Spread extra cream mixture on top and sides.
14. Then, spread reserved cake crumbs covering the cake.
15. Refrigerate the cake overnight before serve.
