為什麼我吃的素食是「全食物蔬食」,而不只是純素食而已呢?
首先,「全食物蔬食」(WFPB)指的是完整、未經加工的食物,也就是從土裡長出來的真食物:蔬菜、水果、全穀物、種子、堅果等。
我14年前由葷轉蛋奶素、11年前由蛋奶素轉純素,3年多前又開始吃全食物,主要有兩個原因:一,在營養學組織NutritionFacts.org工作,每天看各種有關全食物蔬食對健康益處的影片,很難不身體力行。二,其實我天生就不喜歡吃太過沈重、油膩、鹹或甜的食物,吃下去是一種很不好的體驗。
那我是無時無刻都這樣嗎?當然不了。😛 我家裡沒有油、糖或鹽,也不會買精緻穀物,所以在家做飯的時候確實是百分之百實踐全食物蔬食。要是外食,我還是不會吃炸物,也盡量避免白米、白麵條這類的,但對油、糖或鹽就沒有這麼挑惕了。要是很想吃個vegan甜甜圈或起司蛋糕時,我也不會克制自己。重點不是要時時刻刻完美,而是讓健康飲食成為習慣,然後盡力就行了。
每個人吃素的原因都不一樣。我14年前剛開始的時候,一點也不在意健康,甚至還覺得很驕傲(「看,我只在意動物,多高貴的理由」)。不過因為我總是希望不斷提升、拓展自我,在吃素吃了十多年後,更進一步吃全食物對我來說是個挺自然的選擇。吃全食物時,我感覺到自己更有活力,思路更清晰,並且差別最大的,大概就是我的皮膚了(一吃油炸馬上爆痘痘)。同時,看到許多吃素的人因為健康出問題又回去吃肉,但其實他們的問題跟吃素不吃素一點關係都沒有,而是以不健康的加工素食為食、沒有運動習慣,或是沒有正確補充維生素B12(曾經有素食者跟我說她不用補充B12,因為她有一顆對動物的愛心......我只能說我很無語)。
如果把環境也考慮進去的話,全食物是不太需要包裝的,就是蔬菜、水果這些。我平時訂的都是一個紙箱裝滿有機蔬菜直接送上門,連包裝紙袋都沒有,然後下次訂箱子他們再收回去。買堅果則是直接拿罐子到市場去秤重裝。而反觀素漢堡排、素雞塊這類的加工食品,卻幾乎都是購買時就裝在塑膠袋裡的。大自然不是什麼身外之物,我們就是大自然的延伸,我們的健康和地球的健康是息息相關的。要是連自己的健康都不在意,該怎麼守護地球的健康?如果有任何問題,歡迎在底下評論,或是關注NutritionFacts.org的YouTube頻道,影片幾乎都有中文字幕翻譯可以選:https://www.youtube.com/channel/UCddn8dUxYdgJz3Qr5mjADtA

Why am I mostly whole food plant-based (and not just vegan)?
First of all, “whole food plant-based” (WFPB) refers to foods that are unprocessed. So in other words, real foods that grow from the ground: fruits, vegetables, whole grains, seeds, nuts, etc.
I went mostly whole food plant-based three years ago for two reasons: 1) When you work for NutritionFacts.org and watch video after video about the health benefits of a WFPB diet, it’s hard not to walk the talk. 2) My body naturally doesn’t like foods that are too heavy, oily, salty, or sweet. It just doesn’t feel good to consume those foods.
Do I do it 100% all the time? Of course not! 😛 I don’t have oil, salt or sugar at home, and I don’t buy any refined grains. So when I cook at home, I’m 100% WFPB & SOS-free. But when I eat out, I’m more flexible with SOS. I still wouldn’t eat deep-fried foods even when I eat out, and avoid white rice or white noodles as much as I can. But when I crave a vegan donut or cheesecake, I also won’t stop myself. The point is not to do it perfectly all the time, but to make it a habit to eat healthy and just do the best you can.
People go vegan for different reasons. I didn’t care about health when I first started my vegetarian/vegan journey 14 years ago, and I was even proud of it. But I always strive to expand myself, so going WFPB seemed like a natural next step. When I eat clean, I see the difference in my level of energy, cognitive function, and most notably - my skin. I also think it’s a pity to see people who went vegan reverse back to eating meat because they encountered health issues that have nothing to do with being vegan or not, but are actually about eating healthy/real foods vs. processed junk, not supplementing correctly (B12, for example), or not maintaining an active lifestyle.
Taking the environment into consideration, unprocessed fruits and vegetables also don’t require much packaging, unlike vegan patties or nuggets that usually come wrapped in plastic. Nature is not something outside of us - we are nature, and our health is interconnected with the health of the planet. 中國人傳統習俗生日會吃紅雞蛋,從前的人會用花紅粉為雞蛋染色,但花紅粉為工業用色素不利健康,所以現在改用紅色食用色素,或者用紅色玻璃紙包裹。雞蛋是一種老少咸宜的食材,從中醫角度來看它屬性平和,有滋陰潤燥、養血安胎及健腦的功效,但怎樣吃才是最好?來看看以下Q&A能否解決你對雞蛋的疑問。
雞蛋 — 性平,有滋陰潤燥,養血安胎及健腦,適合體質虛弱、營養不良、氣血不足、產婦、孕婦等。蛋黃能健腦益智,增強記憶力,適合嬰兒及小兒適量食用。注意發燒及腹瀉不宜。
問:一天只可吃一隻雞蛋?

答:近年醫學界指從飲食中攝取的膽固醇,並不是導致人體血液膽固醇 增加 的主要因素,預防膽固醇增加應注意減少飽和脂肪和反式脂肪的攝取量。而蛋黃中含有許多營養素是蛋白沒有的,例如Omega-3、鐵、鋅、葉酸等,所以不要嫌棄蛋黃啊!
問:雞蛋哪種食法最好?
答:全熟烚蛋最好,因為生雞蛋含有抗生物素蛋白(avidin)令身體難以消化及吸收蛋白質,當雞蛋煮熟後蛋白結構會變化,蛋白質會易於被吸收,吃烚蛋我們可以吸收到雞蛋的蛋白質九成以上,但吃生蛋只可以吸收三至五成。而雞蛋中可能存在沙門氏菌,食用未完全煮熟的雞蛋例如溫泉蛋、溏心蛋等,會有感染沙門氏菌的風險,所以嬰幼兒、長者或抵抗力較差者宜吃全熟蛋。

Eggs are suitable for both young and old to consume. From the perspective of Chinese Medicine, it is mild in nature, can nourish the yin and moisten the body, nourish the blood, improve the wellbeing of the fetus, and strengthen the brain. A: Fully cooked eggs are the best because the raw ones contain avidin, which is hard to digest and to absorb the protein. When the eggs are cooked, the structure of the egg white will change, making it easier for the body to absorb. Our body can absorb at least 90% of the protein if they are completely boiled, but it can only absorb 30%-50% if the eggs are still raw. Moreover, eggs might contain salmonella, so we might risk getting an infection if we eat soft-boiled eggs and poached eggs that are not fully cooked. Therefore, toddlers and elders with a weak immune system are encouraged to consume eggs that are fully cooked.

Nasi Ala Kak Wook 😜 raya ke dua
Sedapp sangat anak anak & suami pakat puji
Taim panas panas merecikk. Ratah ayam part paling syiokkk.
Model utama:
Nasi putih tanak letak daun pandan simpul. Khasiat banyak tauuu.
Gulai Ayam:
~bawang bombay - 4 labu
~bawang putih - 5 ulas
~halia - 1 inci setengah
~rempah kari daging - 3 sudu
~rempah kerutub - 1 sudu
~Kacang panjang - potong
~Terung potong kecik2
~Leher ayam, kaki ayam, sayap dan paha dipotong2 kecil.
~Santan (jgn pekat sgt)
~ Garam dan kiub ayam
~ 1 kerek nisan
Cara-Caranya
1. Blend bawang merah putih halia & lengkuas hingga lumat dan tumis sampai wangi.
2. Rempah kari & rempah kerutub bancuh dgn air dan gaul pada ayam. Perap sekejap.
3. Kemudian masukkan kedalam bahan2 yg ditumis tadi. Masukkan ayam dan masak ayam empuk. Masukkan santan. Masak sehingga mendidih dan kuahnya sedikit pekat. Masukkan terung dan kacang panjang.
4. Masuk garam, gula nisan dan serbuk kiub ayam. Masak sekejap.
Ayam Goreng Harum:
~1 ekor Ayam - potong kecik2
~Garam- 2 sudu kecik
~kunyit hidup - 2 inci tumbuk lumat
~serbuk kunyit - 1 sudu kecik
~serbuk cili - 1 sudu kecik
~*Daun kari 3 tangkai

Cara2nya
1) Ayam basuh bersih dan toskan.
2) Potong kecik. Lumurkan ayam dgn bahan2 diatas dan perapkan sekejap.
3) Goreng ayam dlm minyak terendam sampai sederhana garing.
Sambal Belacan Ala Kak Wok:-
4 biji cili kering - direbus
Cili padi ikut pedas
2 inci belacan
1 labu bawang besar dibakar
1 labu bawang putih dibakar
Gula, garam, perasa
Air asam jawa

The ways
1. Blend of garlic garlic & Galangal until it's squish and stir-fry until it smells good.
2. Spice Curry & Spice Spice Mix with water and gaul on the chicken. Marinated for a while.
3. Then put in the ingredients that were sauteed just now. Put in chicken and cook soft chicken. Put in coconut milk. Cooking until boiling and the soup is a little thick. Insert Eggplant and long beans.
4. In Salt, Nisan and chicken cubes powder. Cooking for a while.
Fragrant fried chicken:
~ 1 chickens - cut small
~ Salt-2 small spoons
~ Living Turmeric-2 inches of mashed punch
~ Turmeric Powder-1 small spoon
~ Chili Powder-1 small spoon
~* Curry Leaves 3 stalk

Cara2nya
1) chicken wash clean and throw it.
2) small cut. Chicken put with ingredients above and it for a while.
3) fried chicken in the oil is submerged until it's simple crispy.

4 pieces of dried chili - boiled
Chili is following spicy
2 inches of belacan
1 big onion pumpkins burned
1 garlic pumpkin burned
Sugar, salt, flavor
Java Sour water

夜香花冬瓜湯(2~3人份量):
材料:
夜香花120克(大約2~3兩)
冬瓜1斤
瘦肉120克
皮蛋1隻
鹹蛋1隻
薑3片
調味料:
鮑魚汁1/2茶匙
生粉1/2茶匙
處理:
1. 夜香花用清水浸10分鐘。
2. 洗淨瘦肉。
3. 冬瓜去囊、去皮,切細粒。
4. 薑,切3片。
5. 瘦肉切片。
6. 瘦肉調味:
a. 鮑魚汁1/2茶匙
b. 生粉1/2茶匙
攪勻。
7. 皮蛋,剝殼,1開4舊。
8. 鹹蛋,剝殼。
9.夜香花已浸好,沖洗乾淨。
烹調:
1. 煲1公升水,放薑片落煲。
2. 放瘦肉、冬瓜皮、及鹹蛋黃。
3. 滾起後,收至中慢火,再滾5分鐘。
4. 放夜香花及皮蛋,滾2分鐘。
5. 過了2分鐘之後,一邊放鹹蛋白,一邊攪拌,完成。
Winter melon soup with telosma cordata:
Ingredients:
Telosma cordata 120g
Winter melon 1 catty
Lean meat 120g
Century egg 1 No.
Salted egg 1 No.
Ginger 3 slices
Seasoning:
Abalone sauce 1/2 tsp
Tapioca starch 1/2 tsp
Preparation:
1. Soak telosma cordata in tap water for 10 minutes.
2. Rinse the pork.
3. Clear the seeds, peel off and dice the winter melon in small cubes.
4. Cut 3 slices of ginger.
5. Slice the pork.
6. Season the pork:
a. abalone sauce 1/2 tsp
b. tapioca starch 1/2 tsp
Mix well.
7. Remove shell of century egg, divide into 4 shares.
8. Remove shell of salted egg.
9. Rinse telosma cordata thoroughly.
Steps:
1. Boil up 1L water, put ginger slices then.
2. Put pork, skin of wintermelon and salted egg yolk.
3. Turn to medium low flame after boiling up. Cook 5 minutes more.
4. Put telosma cordata and century egg, cook 2 minutes more.
5. Stir the soup, at the same time, add salted egg white. Serve.
