為什麼我吃的素食是「全食物蔬食」,而不只是純素食而已呢?
首先,「全食物蔬食」(WFPB)指的是完整、未經加工的食物,也就是從土裡長出來的真食物:蔬菜、水果、全穀物、種子、堅果等。
我14年前由葷轉蛋奶素、11年前由蛋奶素轉純素,3年多前又開始吃全食物,主要有兩個原因:一,在營養學組織NutritionFacts.org工作,每天看各種有關全食物蔬食對健康益處的影片,很難不身體力行。二,其實我天生就不喜歡吃太過沈重、油膩、鹹或甜的食物,吃下去是一種很不好的體驗。
那我是無時無刻都這樣嗎?當然不了。😛 我家裡沒有油、糖或鹽,也不會買精緻穀物,所以在家做飯的時候確實是百分之百實踐全食物蔬食。要是外食,我還是不會吃炸物,也盡量避免白米、白麵條這類的,但對油、糖或鹽就沒有這麼挑惕了。要是很想吃個vegan甜甜圈或起司蛋糕時,我也不會克制自己。重點不是要時時刻刻完美,而是讓健康飲食成為習慣,然後盡力就行了。
每個人吃素的原因都不一樣。我14年前剛開始的時候,一點也不在意健康,甚至還覺得很驕傲(「看,我只在意動物,多高貴的理由」)。不過因為我總是希望不斷提升、拓展自我,在吃素吃了十多年後,更進一步吃全食物對我來說是個挺自然的選擇。吃全食物時,我感覺到自己更有活力,思路更清晰,並且差別最大的,大概就是我的皮膚了(一吃油炸馬上爆痘痘)。同時,看到許多吃素的人因為健康出問題又回去吃肉,但其實他們的問題跟吃素不吃素一點關係都沒有,而是以不健康的加工素食為食、沒有運動習慣,或是沒有正確補充維生素B12(曾經有素食者跟我說她不用補充B12,因為她有一顆對動物的愛心......我只能說我很無語)。
如果把環境也考慮進去的話,全食物是不太需要包裝的,就是蔬菜、水果這些。我平時訂的都是一個紙箱裝滿有機蔬菜直接送上門,連包裝紙袋都沒有,然後下次訂箱子他們再收回去。買堅果則是直接拿罐子到市場去秤重裝。而反觀素漢堡排、素雞塊這類的加工食品,卻幾乎都是購買時就裝在塑膠袋裡的。大自然不是什麼身外之物,我們就是大自然的延伸,我們的健康和地球的健康是息息相關的。要是連自己的健康都不在意,該怎麼守護地球的健康?如果有任何問題,歡迎在底下評論,或是關注NutritionFacts.org的YouTube頻道,影片幾乎都有中文字幕翻譯可以選:https://www.youtube.com/channel/UCddn8dUxYdgJz3Qr5mjADtA

Why am I mostly whole food plant-based (and not just vegan)?
First of all, “whole food plant-based” (WFPB) refers to foods that are unprocessed. So in other words, real foods that grow from the ground: fruits, vegetables, whole grains, seeds, nuts, etc.
I went mostly whole food plant-based three years ago for two reasons: 1) When you work for NutritionFacts.org and watch video after video about the health benefits of a WFPB diet, it’s hard not to walk the talk. 2) My body naturally doesn’t like foods that are too heavy, oily, salty, or sweet. It just doesn’t feel good to consume those foods.
Do I do it 100% all the time? Of course not! 😛 I don’t have oil, salt or sugar at home, and I don’t buy any refined grains. So when I cook at home, I’m 100% WFPB & SOS-free. But when I eat out, I’m more flexible with SOS. I still wouldn’t eat deep-fried foods even when I eat out, and avoid white rice or white noodles as much as I can. But when I crave a vegan donut or cheesecake, I also won’t stop myself. The point is not to do it perfectly all the time, but to make it a habit to eat healthy and just do the best you can.
People go vegan for different reasons. I didn’t care about health when I first started my vegetarian/vegan journey 14 years ago, and I was even proud of it. But I always strive to expand myself, so going WFPB seemed like a natural next step. When I eat clean, I see the difference in my level of energy, cognitive function, and most notably - my skin. I also think it’s a pity to see people who went vegan reverse back to eating meat because they encountered health issues that have nothing to do with being vegan or not, but are actually about eating healthy/real foods vs. processed junk, not supplementing correctly (B12, for example), or not maintaining an active lifestyle.
Taking the environment into consideration, unprocessed fruits and vegetables also don’t require much packaging, unlike vegan patties or nuggets that usually come wrapped in plastic. Nature is not something outside of us - we are nature, and our health is interconnected with the health of the planet. 在經過了47項血液、尿液、血壓等醫院檢查後,我可以很開心跟大家分享自己是個健康寶寶!😄
【先說明一下我的飲食演變史】
💚從有記憶以來就不吃海中動物(任何魚、蝦、螃蟹等)
💚12年前開始蛋奶素
💚9年前開始純素
💚1年多前開始「全食物植物」飲食
【檢驗結果】
💚鐵、鈣、鈉、鉀、鎂之類的東西都不缺
💚三酸甘油酯、低密度脂蛋白膽固醇、尿酸之類的不但正常,大概也比一般葷食者低很多
💚血糖、紅血球(還有其他很多項目)也都正常
唯一讓我一開始有點不確定的就是維生素B12比一般數值高(這通常是素食者最容易缺乏的,但我竟然還太多😂),後來親自請問了營養學界的權威、NutritionFacts.org創辦人Dr. Greger(格雷格醫師),他說這沒大礙,所以「In other words, you're perfect」。
要特別強調的是,我唯一會吃的補充品就是「維生素D」和「維生素B12」,因為只有這兩種是從飲食中比較難攝取到的。既然我顯然不用擔心B12過低,現在補充的頻率也稍微減少了。
以前的我絕對不會用「健康」兩個字來形容自己。只要上個體育課在戶外曬曬太陽就覺得頭暈;膝蓋有舊傷,走路多了就痛;每個月生理期簡直要痛死,無法正常生活;濕疹、皮膚過敏;經常胃痛,還曾經必須送急診;每幾個月就感冒一次;經常性頭痛……但是這些問題在過去9年來都消失了。我從連路都不能多走,到最喜歡騎腳踏車兜風;從不敢從事戶外活動到熱愛曬太陽、健行;從懼怕生理期,到每個月它來了我也完全沒事。
我並不是那種一輩子一口肉都沒吃過的胎裡素寶寶,所以我可以感受到不同飲食帶給我身體的改變。說穿了,我不是「竟然吃素還那麼健康」,而是「正因為吃素才那麼健康」。我是個家族史裡有癌症和各種慢性病的人,但我知道,疾病只有極小部分取決於基因,而大部分都能靠飲食和生活習慣預防。
順帶一提,我現在已經很少推廣「吃素」了,而是會推廣「吃全食物植物」,因為炸薯條、可樂和白米飯也是素的,但卻不是最健康的食品。在我看來,營養學對所有人都重要,但素食者尤其要了解,因為如果你不健康,別人會把你的不健康怪罪到素食頭上,到頭來害到的還是動物。我見過許多素食者因為吃得不健康,最後竟然怪素食,又回去吃動物製品,這是非常可惜也誤導人心的。

I'm happy to announce that after 47 tests, I can finally share with the world that I'm healthy! Not lacking any vitamins or minerals; normal numbers in LDL, blood sugar, urid acid, triglyceride and so on; and I feel amazing. The only thing that I was unsure about was my high B12 level, but I consulted Dr. Greger. According to him, it's not a problem, and "in other words, you're perfect!"
So here's the evolution of my diet:
💚Forced to eat a few bites of fish and other sea animals when I was little, but that was the end of it. Never ate them ever since.
💚Went vegetarian 12 years ago.
💚Went vegan 9 years ago.
💚Went whole food plant-based (WFPB) a bit more than 1 year ago, with vitamin D and B12 supplementation.
To sum up, all my health problems have been gone for the past 9 years, including chronic stomach ache, debilitating menstrual cramps, knee pain, eczema, constant cold, etc. I'm not healthy despite being vegan - I'm healthy because I'm vegan (and WFPB, I'd add).
I'm someone with a family history of chronic diseases (particularly cancer), but I know it's mostly up to me to prevent diseases with diet and lifestyle changes. I wasn't born vegan or WFPB, so I clearly feel the difference in how my body reacts to different types of diets. For me, it's a journey of empowerment and compassion toward self and others, and I'm happy to keep going. ✌️

跟姊姊吉妮到我最喜歡的Plants享用健康零負擔大餐 💚
近年來看著vegan餐廳一家一家開,但真正的「全食物」餐廳還是比較少見的。全食物蔬食(盡量吃食物的原型原味,不加工)是近一年多來我主要採行的飲食。外食因為通常比較難,我也就比較彈性,不過在家就是100%的全食物蔬食了。而在這家餐廳吃飯的好處之一就是不需要妥協,因為外食也可以很健康!😍
從12年前轉蛋奶素,9年前轉純素,1年多前開始又轉成全食物蔬食,這中間我感受到身體上極大的正面改變,也從來沒有覺得自己如此健康過。不過這個故事太長了,改天再找機會來一次分享好了。🌱💕🥗

Treating my sister Ginny an amazing dinner at my favorite restaurant in Taiwan, Plants ! ❤️ Over the past few years I’ve witnessed a surge in the number of vegan restaurants here, but I very rarely find one that’s whole food plant-based, a scientifically proven diet that’s healthy for us.
Saying you’re vegan just tells people what you don’t eat instead of what you do eat...and I want to put real, unprocessed foods into my body as often as I can. I’ve been eating mostly WFPB for more than a year now and have felt a huge difference in how I feel and how my body reacts to food. But that’s another (long) story I will share in another post...hopefully soon! 🌱💕🥗
