在11月23日不幸遭法官在未作判刑前,便宣布即時還柙後,我本來已有意在patreon發表獄中書簡,跟關心我的朋友述說再度入獄的想法。結果卻因當晚突然被單獨囚禁的狀況而大失預算。即便已有三次坐監的經驗,但被送到「監獄中的監獄」囚禁,實在是始料不及。我花了不少時間與精神,方能驅使自己平伏下來整理思緒,過程實在不是容易。
還柙首天,我被送到去年六月才步出的荔枝角收押所,然後進行不陌生的入冊程序 —— 見長官、換囚衣和領取個人用品等。本來我已對這些程序諷刺地感到熟悉,但到了下午四時左右,當我跟林朗彥相繼完成初到荔枝角收柙所的各項程序並呆坐於指模房一角等侯指示時,保安組職員突然將我帶往收押所醫院。我本來以為在獄中見醫生是基於程序需要,結果卻被帶到收押所醫院走廊盡頭的單人囚室,那刻我才深知不妙,也成了惡夢真正的開端。
到達單人囚室後,懲教人員表示我需要等待長官前來講解狀況,並拋下一句「你之後應該都喺到」便離開。等待過程中我感到非常不安,不斷猜想懲教會搬出甚麼原因來把我隔離囚禁於單人囚室。結果千算萬算也算不到,懲教表示我的X光片有不妥——懷疑我肚內藏有異物,諸如毒品、戒指或金銀器等,故此我需要接受為期數天的隔離囚禁。
之前三次入獄也有照過X-ray,自問從來跟毒品二字完全沾不上邊,而還柙前的三餐也是正常食物,對於這個奇怪結果完全摸不着頭腦。另外,因為懲教院方並不允許在囚人士檢查X光片,即沒有途徑和渠道查證,所以對於這個檢查結果更是無從稽考。
因被懷疑體內藏有毒品而在醫院隔離囚禁,囚禁的待遇比起「水飯房」還要不堪。一般而言,還柙侯判的在囚人士於日間均會在有三至四十人的活動室打發時間,而晚上則回到五人囚室休息。惟我被隔離囚禁期間,除了探訪和洗澡以外,基本上是半步都不能踏出這個七十多呎的囚室,不能「放風」亦連一小時户外活動的時間也不被允許。由於整項隔離措施是應對在囚人士體內藏有毒品為前提,所以懲教職員每隔四小時便會來量我的血壓及檢查血含氧量。除了凌晨一時及四時也需起床作檢查外,囚室也是二十四小時開着燈的,所以我需要把CSI口罩當眼罩使用,才能勉強入睡。
最難捱的是,由於整個隔離囚禁的原意是希望體內藏有毒品人士將毒品排出體外,所以我並不能使用囚室的馬桶,而水龍頭也不會有水,以杜絕在囚人士將毒品沖走的可能。取而代之的,就是院所提供的塑膠便盤。但因為便盤的更換次數不足,我只能在洗手盆如廁小解。在囚人士排泄於便盤後,需知會懲教署保安組前來囚室,仔細檢查排泄物有否藏有藥丸或毒品之類的異物。當檢查程序完畢後,職員便會要求在囚人士在一張「單獨觀察」的紙張上簽名作實。我仍然歷歷在目每次簽署時看到紙張清楚列明「懷疑在囚人士體內藏有毒品」一欄,感覺實在很不好受。
據聞隔離囚禁一般為期三至五日,而今天已是正式被單獨囚禁的第二天。但願此信寄出及發佈的時候,我已結束隔離。在還未能適應及消化自己已身處監獄裏的事實,就被送往單獨囚禁,斷絕了一切活動及溝通,的確不好捱,情緒亦難免受到牽動。故此,抱歉我暫未能在大政治和社會環境的層面提供什麼分析,但我知道還有很多手足正在面臨官司,或和我一樣身陷囹圄,還望大家繼續有幾多做幾多,讓他們知道自己不是孤身一人。下周一(30日)是12港人被捕送中100天的日子,亦懇請大家繼續關注。
最後想說,面對未知的官司刑期及種種不確定性,必須坦誠地說會有不安及焦慮,但正如我再步入犯人欄時說到「大家頂住,我知道外面嘅人更加辛苦,繼續努力。」,我也會學習把獄中遭遇的苦難轉化為驅使自己成長的果實。我知道絕不容易,但我會努力頂住,共勉之。

The prison inside prison
After my immediate remand on November 23, I had intended to send letters from the prison to update you my latest situation in jail after my remand on November 23. But owing to the sudden solitary confinement that night, it turned out that I was unable to do so. Although I have been in prison three times, being held in the prison isolation unit is far beyond my expectation. It took me a lot of time and energy to calm myself down and reorganise my thoughts.
On the first day of remand in Lai Chi Kok Reception Centre, I went through the registration procedures—meeting with officers, changing into prison clothes and obtaining daily necessities. The procedures are very familiar as I was released from here in June. At about 4 pm, Ivan Lam and I completed all procedures and waiting for further instructions in the fingerprinting room, officers from the security team suddenly took me to the hospital in the Centre. While I thought it was a normal procedure to see doctor, I was taken to a single cell at the end of the hospital corridor. At that moment, I knew it was the beginning of the nightmare.
After arriving the single cell, the correctional officer told me that I needed to wait for a senior officer to explain the situation and said, "You should be here for a while." During waiting for the senior officer, I felt very disturbed and kept wondering why they moved me to solitary confinement. In the end, the senior provided a highly unexpected reason—there were "foreign objects" in my stomach, the officer said, they could be drugs, rings or gold and silver objects. Therefore, I needed to be in solitary confinement for several days until they found out what the "foreign objects" were.
I have taken X-rays for a few times, but nothing happened before, I was completely confused about the X-rays result. I have never had anything to do with drugs, and all food I had before remand were normal food. Moreover, under the current policy, the prison administration does not allow inmates to see their X-rays, so there is no way to verify the results.
As the officers suspected I possess drugs in my body, the treatment was even worse than normal solitary confinement. Generally speaking, persons in remand can spend their time in the activity room with three to forty other inmates in the daytime and return to their five-personal cell at night. However, what happened to me was, apart from visiting by my friends and relatives and taking a shower, I basically could not leave the single cell. I was even not allowed to have one hour of outdoor activity. Since the isolation was based on the presumption of possession of drugs, correctional officers would check my blood pressure and oxygen saturation every four hours even at midnight. The light in the cell was also kept turning on 24 hours a day, so I needed to use my face mask as the blindfold to barely put myself to sleep.
The most difficult thing was that since the original intent of the entire confinement was to let persons excrete drugs from their body, so I could not use the toilet in the cell, and the tap did not have water to prevent people from flushing drugs away. Instead, officers would provide a plastic plate. But because of the lack of replacement of the toilet plate, I could only use the washbasin to urinate. After the I excreted in the plate, I needed to inform the officer to come to the cell and check the excrement for any foreign objects such as pills or drugs. When the process was completed, the officers would ask me to sign an "isolated observation" form. I still remembered the uncomfortable feeling when I saw the form clearly stated "suspected possession of drugs in the inmate's body" every time I signed the paper.
To my understanding, such solitary confinement generally lasts three to five days, and today is the second day of formal solitary confinement. I hope that when this letter is sent and published, the isolation is ended. Before I could adapt the fact that I was already in prison, I was sent to solitary confinement and all activities and communication were cut off. It was indeed difficult to endure, and I am sorry that I have not yet provided any analysis of the politics and social environment. But I know that there are still many other Hong Kong protesters who are facing lawsuits or are in jail like me. I hope you can continue to do as much as you can to let them know they are not alone. Monday (November 30) is the day when 12 Hongkongers were arrested and sent to Mainland China for 100 days, I urge everyone to continue to pay attention to them.
Finally, I want to be frank that, in the face of uncertainties, I just feel uneasy and anxious. However, as I said when I stepped into the dock in the courtroom, "Hang in everyone, I know the situation that the people outside face will be more difficult. Keep fighting." I will also learn to turn the pains and sufferings I encountered in prison into the power that drives my growth. I know it will never be easy, but I will try my best.

第十三回--晚餐
有種問題,是沒有答案的,任何東西都可以是答案,因為問的人,就是沒有固定答案。
曉如說我做什麼都可以過關,便是想知道我的答案,我需要做的,只是真心的去過一個生日,一個沒有曉如的曉如生日。
還記得以往生日,最初認識的時候,大家也會給對方特別多的驚喜,所以我們會等待和期待,但經過幾年的經驗之後,相對大家對彼此的能耐也有一定認識,每年生日前曉如也會瘋狂暗示她想要些什麼慶祝活動,只差在沒有付款而已;到再後期,大家便懶得慶祝,只是靜靜的在家,送一份感覺不錯的禮物,吃一頓好的。
這次我終於明白了曉如的心意,她只想我最後一次,為她去想要過一個怎樣的生日。
寫下一個清單,曉如她最喜歡的禮物,吃的東西,再訂了一家當年我們覺得貴得要命的酒店,把一切都辦妥後,我坐在家中沙發,幻想起如果曉如她知道的話,會是一副怎樣驚喜的樣子。
我很想跟以前一樣,把一丁點一丁點的安排透露給她,那種忐忑的心情,但隨之想到,她不在了……再好的安排,也只是隔空的自我慰藉,我便忍不住的哭起來了。
老實說,到了某個年紀,我們生日要的禮物也好,安排也好,有什麼是自己動手解決不了?唯一貴重的,是到了這個年紀,還有一個人會認認真真,隆重其事的為你慶祝生日,留在你身邊不離不棄的那個人,是用錢買不到的。
當天我帶著阿曉和小如一起到達酒店,對,我是找了一家寵物也能進入的酒店,還特別的給牠們買了可愛萌爆的新衣服,曉如是個喜歡拍照打卡的人,一直我對這種相機蓋過生活體驗的態度不太有好感,但我知道她喜歡。
酒店的前台問我:「章先生你今天是一個人嗎?」
「對的,給我一張大床就可以了,對了,等一下會有花店送花過來,汽球公司也會給我送汽球,你們給我送上來就可以。」
聽到我這要求的前台應該很奇怪,我一個老男人,帶著貓狗,花和汽球一個人住酒店,不會是個變態吧。
但我沒有考慮太多她的感受,因為我想到這裡又有點想哭,深呼吸了一口氣道謝了便上房間去了。
把牠們安置好後,汽球和花也差不多時間送到了,今天最重要的一環,就是給曉如打卡拍照。
上一次來到這酒店,曉如在窗邊的海景自拍了差不多一個小時,然後要我幫她拍,還特別的下載了幾個照相軟件給我。
「我知道你不懂角度,這款apps會重疊角度,你照指示便可以拍得出來了!」
作為一個不懂拍照的老公,我只能奉命行事,折磨了我差不多一個小時,然後她開開心心的把照片放上網,我亦隨之讚好。
然後今天我對著擺設得誇張的汽球和花,房間裡的氣氛很好,但那個會讚嘆,會發瘋,會笑,會哭的她,卻不在。
為這些事物拍照,我特別的用心,因為這是我應該要做的事,比起以前每次曉如拍照時我不耐煩的玩電話,今天我只用我的電話去為這一切,留下最美的相片,一張張,沒有曉如的相片。
晚上我訂了一家米芝連的星級餐廳,曾經我答應過曉如,有錢時要跟她吃盡所有香港的星級餐廳,這些年來也吃了十多家,我建議她說她能在自己的專頁寫寫食評,順便當個吃貨KOL,但她拒絕了,她說她的專頁只喜歡寫故事。
到達餐廳時,我報上了姓名,侍應禮貌的帶我到了一張窗邊二人桌,因為我訂的位,是二人的,侍應知道我是二位,所以他把飲品和小食餐牌遞了給我,然後問我要不要先來點飲品,我說不用,他再問,那要不要水呢?
我笑了笑,跟他說:「給我一支Sparkling Water吧!」
侍應聽到後便去準備,而我卻回想起第一次跟她去高級餐廳時,剛坐下來侍應也問要不要來點飲品,我們說先看看,然後侍應問要不要水,當然是用英文說吧,因為那侍應是外籍的。
當時我們還是在儲錢結婚,錢不太多,侍應問我們要什麼水的時候,有Mineral Water, Sparkling Water和Still Water,年輕的我們選了個Still Water,誰不知上桌的也是一支玻璃瓶的水,最後收費88元正,我們喝在口,痛在心,那次我們還特別的去品嚐著這支Still Water。
我說:「唔……入口清澈毫無雜質,吞後還有少許甜度回甘!」
曉如呷了一口也嘆道:「所以我說,水就是要喝這種高級的,姐喝的可是錢的味道!」
兩個人笑笑說說跟品酒一樣玩了整支水。
以後我們學乖了,知道tap water才是免費的,或者warm water也可以,其他的很可能要收費。
想起這段連喝支水也要算過度過,笑過苦過的過去,我點的這支Sparkling,比起Sparkling Wine還要讓人回味。
喝了半支水之後,我讓侍應給我餐牌,我點了兩個套餐,前菜、主菜和甜品都是雙份的,侍應問我要等多久再上,我跟她說,現在就可以上,今晚只有我一個,雖然有點驚訝,但有修養的侍應沒說什麼便答應了,我提提她,每款也給我分兩份可以嗎?她說很樂意幫忙。
隨餐會上每一道菜相對的Pairing Wine,我記起曉如當年看完神之水滴之後,還會裝作很懂酒的樣子,喝了一口,她說:「我喝到了田園,喝到了微風,喝到了一種努力的感覺!」我說你不要裝了,這支酒只是八十八元的便宜貨,你寫你的小說好了,這酒你喝慢一點也會酸啊!
當然這次的酒肯定是嚴選的,的確,酒和菜式也很配合,把鮮味、把甜味、把濃味也配搭出新的口味,我不懂酒,只可以說很好喝。
曉如說過,酒和菜的配合,是Marriage,就像婚姻一樣,菜式和酒,是兩種完全不同的東西,但不同的菜,總有一支能配合到的酒,為這道菜帶出另一種感覺。
兩種可以獨立的東西,放在一起竟然有不同滋味,幾方的缺點掩蓋,引出各自的優點。
或者發明將酒和菜Pairing用Marriage來形容的人,也是個在婚姻中甚有體會的過來人。
豐富的晚餐,一分為二的份量,曉如在的話,我都是讓她點餐,因為她想吃的通常也很多,但吃得下卻不多,而我只好讓出自己的選擇,然後大家平分,她便可以享受多幾款喜歡的東西。
有好幾次她吃了我的東西,然後覺得自己的比不上我,便強搶了我的餐點,我只好被迫吃她不想吃的東西,每次苦笑後,看到她高興的模樣我便滿足了。
我靜靜的吃下兩個套餐的半份,再慢慢喝下跟餐的酒,當全都上齊時,時間都已經快十點了,我坐了足足兩個多小時,侍應問我需不需要打包餘下的食物時,我說不用,全收走吧。
收走餐盤後,侍應再次細心的走過來問我,是否需要上生日蛋糕,一開始我訂位時是說明曉如和我生日,照理應該會寫上兩個人的名字。
星級餐廳的好,在於他們用心去服務,看到一個訂了兩個位,兩個生日的人,吃了兩套菜,一個人呆著的看窗,如果是故事的話,應該是被人放飛機的可憐人。
如果現在再端上一個寫有兩個人生日的蛋糕,肯定會令場景更尷尬,更傷人,但我說沒問題,按照之前的預定上吧。
這是他們最著名的疏乎里蛋糕,亦是曉如最喜歡的蛋糕,上面潦草的寫著,曉如,少崇,Happy Birthday,可能是酒精的影響,說到底我喝了六小杯,也差不多一支的悶酒。
當我看到Happy Birthday的字時,我揚起了嘴角想笑,但眼淚卻禁不住湧出來,這個生日,是我人生之中過得最不開心的生日……
正常侍應會問需不需要拍照之類的,但再冷靜的侍應也會被一個奇怪的老男人眼淚所震撼,他立即給我遞上紙巾,但我卻想將這一刻好好記錄下來,遞給他手機後,走到對面的坐位,站在沒有人的位置旁。
「葉曉如,生日快樂。」
抬頭向前微笑,咔嚓。
我另外向餐廳要了支白酒,準備第一下回酒店房再喝一下,但岑佩兒給我打了電話:「章少崇,你的生日過成怎麼樣?」
「沒什麼,飲飽食醉,過得不錯呢!」
「你……喝了酒?」
「這樣開心的日子喝點酒不是正好嗎?」
「唉,你在哪裡?我過來找你吧,我有東西要給你。」
「好啊,你過來啊,我還怕要喝悶酒,你來一起喝吧!」
「好了好了,你等我!」
另一邊廂,還有一小時生日的我,收到了趙可寧的Happy Birthday。

金銀蛋菠菜苗
材料:
菠菜苗1斤
鹹蛋1隻
皮蛋1隻
蒜頭8粒
處理:
1. 菠菜苗,切去根部,清水浸5分鐘。
2. 蒜頭,去皮,切去頭部硬的部分。
3. 皮蛋,連包裝袋,用菜刀輕手拍一拍,除去殼,洗乾淨,1開8。
4. 鹹蛋,加入少許水分,使其容易除去鹹蛋灰,清水洗乾淨,分開蛋黃及蛋白在2個碗內。
5. 菠菜,已浸好,用清水沖洗1至2次。
烹調:
1. 大火在鑊中燒熱油1湯匙。
2. 加入蒜頭。
3. 加入菠菜,冚蓋,焗2分鐘至軟身。
4. 反一反菠菜,炒一炒,冚蓋煮1分鐘。
5. 菠菜已煮好,夾上碟。蒜頭及菠菜汁仍留在鑊內。
6. 加入鹹蛋黃,慢火煮1分鐘,1開4。
7. 加入皮蛋,1開8,轉大火,加入鹹蛋白至大滾起,放在菠菜上面。
8. 完成,可享用。
Gold and silver egg baby spinach
Ingredients:
Baby spinach 1 catty
Salted egg 1 No.
Century egg 1 No.
Garlics 8 Nos.
Preparation:
1. Baby spinach, cut the roots, soak in tap water for 5 minutes.
2. Garlics, get them peeled. Cut the hard end.
3. Century egg, beat it in plastics with chopper. Remove the shell. Rinse with tap water. Divide it into 8 shares.
4. Salted egg, mix with little tap water, this is to ease removing its ash. Rinse with tap water. Break it in a bowl. Separate the egg yolk and egg white in 2 bowls.
5. Spinach, has been soaked well, rinse with tap water for 1 to 2 times.
Steps:
1. Heat up oil 1 tbsp at high flame in wok.
2. Put garlics.
3. Put spinach, cover up the wok for 2 minutes until it turns soft.
4. Flip over the spinach, fry for a few seconds, cover up the wok for 1 minute.
5. Spinach has been cooked well, put on plate. Garlics and spinach sauce is still in wok.
6. Put salted egg yolk, cook at low flame for 1 minute. Divide it into 4 shares.
7. Put century egg. Divide it into 8 shares. Turn to high flame, put salted egg white, wait for boiling up. Put on top of spinach.
8. Complete. Serve.

I got an Oreo-style mold, so I made something like Oreo with cookies sandwiched between chocolates.The point of the effort is to bake the cookies inside as white as possible to make them look more like cream.This mold is so cute. I hope I can make soap or something.
*recipe*
Make the Oreo cookie part with chocolate
1.Place 70g of chocolate in a heatproof container and cover with plastic wrap.
2.Heat in a microwave oven at 600w for 50 seconds. Switch back and forth and heat again for 50 seconds.
3.Take it out,stir slowly to prevent air bubbles from forming and melt the chocolate completely.(If it does not melt completely, heat in 10-second increments.)
4.Mix for 1 minute while cooling with ice water.
5.Cover with plastic wrap again and heat for 40 seconds.
6.Pour into a mold.
7.Tap the mold on the table to release the air bubbles.
8.Chill in the refrigerator.
Make the cream part of Oreo with cookies
9.Knead 50g of unsalted butter softly.
10.Mix in 40g of sugar.
11.Eat in 20g egg white.
12.Sift 100g of cake flour and fold.
13.Roll the dough into a tube and put it in the freezer for about 30 minutes.
14.When the dough is easy to handle, take it out of the freezer, form it into a 4 cm tube, and chill it in the freezer for 30 minutes.
15.When cool enough to cut, cut into thin slices. I made about 24 sheets.
16.Place on the top plate and bake in an oven preheated to 140 ° C for 20 minutes.I put aluminum foil and a top plate on top in 10 minutes to bake it white.

オレオ風の型を入手したので、チョコでクッキーを挟んだオレオみたいなものを作りました。中に挟んだクッキーをクリームに近づけるべく、できるだけ白く焼き上げるのが努力ポイントです。この型かわいいんだよ。石鹸とか作ってもいいなぁ。
*レシピ*
チョコレートでオレオのクッキー部分を作ります
1.耐熱容器にチョコレート70gを入れ、ラップをする。
2.電子レンジ 600wで50秒加熱する。前後を入れ替えて、再び50秒加熱する。
3.取り出し、気泡を作らないようにゆっくり混ぜ、チョコレートを完全に溶かす(完全に溶けない場合は10秒ずつ様子を見ながら加熱する)。
4.氷水で冷やしながら1分混ぜる。
5.再びラップをして、40秒加熱する。
6.型に流し込む。
7.トントントンと台に打ち付け、気泡を抜く。
8.冷蔵庫で冷やす。
クッキーでオレオのクリーム部分を作ります
9.無塩バター 50gを柔らかく練る。
10.砂糖 40gを入れ混ぜる。
11.卵白 20gを入れ混ぜる。
12.薄力粉 100gをふるい入れ、さっくりと混ぜる。
13.ざっくりと筒状にまとめ、冷凍庫で30分ほど冷やす。
14.扱いやすくなったら冷凍庫から取り出し、4cmの筒状にし、冷凍庫で30分ほど冷やす。
15.切れるくらいの固さまで冷えたら、薄く切り分ける。24枚ほどできました。
16.天板に並べ、140℃に予熱したオーブンで20分焼く。白く焼き上げるために10分の段階で、上にアルミ箔と天板を入れました。
17.(8)を型から取り出す。
18.焼き上がった(16)がまだ温かいうちに(17)で挟みくっける。
19.でけた。かわええ。

Weekend cake is actually a plain looking cake, made in a simple way, and the cake structure is firmer and less fragile, so it's ideal for a 3-4 days trip, or a weekend friend gathering dessert. This recipe is from Le Cordon Bleu, but we’ve made some adjustments. Hope you like this video. :-) Enjoy.

How to make Le Grapefruit Weekend Cake Recipe
French pound cake Recipe
☞ Pan size: 14x7cm
✎ Ingredients
☞ For the cake
egg 2
grapefruit 1
granulated sugar 80g
cake flour 85g
a pinch of baking powder
unsalted butter 80g, melted
** For grease a pan: 10g of melted butter, 20g of flour
☞ For the apricot glaze
nappage abricot 25g
water 25g
☞ For the grapefruit syrup
Grapefruit juice 30g
powdered sugar 18g
✎ Instructions
1. Brush the melted butter evenly on the base and edges of a pan. Dust the inside the pan with flour, then tip out and discard any excess flour.
2. Add hot water in a medium bowl, place the butter pieces in a stainless steel bowl, put the bowl in the hot water and cover a cloth, set aside and keep warm.
3. Add 80g sugar in a bowl, zest an half of grapefruit into it. Then rub the grapefruit zest and sugar together with your fingers until fragrant and combined.
4. In a large mixing bowl, add two eggs and grapefruit sugar, whisk them together for 7~8 minutes until the egg mixture is pale and fluffy. If you use hand electric mixer, then beat on medium speed for 2 minutes, then change to low speed for 1 minute.
5. Sift the flour and baking powder into the egg mixture, and gently fold until you have a smooth batter.
6. Pour the melted butter into the bowl, mix until fully incorporated and the texture is a little bit glossy.
7. Fill three-quarters full with batter. Tap the pan 1 or 2 times to cause the air bubbles to rise to the surface.
8. Pour melted butter in a small tray, and dip the melted butter with scraper, then gently touch the center of the batter to create a butter line.
9. Preheat the oven to 170°C and bake for 30~35 minutes. Remove the cake from the pan and place it onto a cooling rack and leave to cool.
10. Use a small pan to melt the apricot and water over low heat. Brush the top with warm apricot glaze and leave for minutes while making grapefruit syrup.
11. For the grapefruit syrup, mix together the grapefruit juice and icing sugar. Brush the syrup over the side of the cake, then refrigerate for 1-2 hours.
