INGREDIENTS
1) 3 Medium Bananas
2) 2 Eggs
3) 1/3 cup Coconut Oil
4) 1/4 cup Coconut Milk
5) 1 3/4 cup Whole Wheat Flour
6) 1/2 tsp. Ground Cinnamon
7) 1/2 tsp. Salt
8) 1 tsp. Baking Soda
9) 1/2 cup Chocolate Chips & Chopped Walnuts
STEPS
1) Preheat the oven to 165°C / 330°F.
2) In a plate, mash the bananas with a fork until desired consistency.
3) In a bowl, mix coconut oil, coconut milk and eggs until well combined.
Add the crushed bananas into the bowl and continue mixing.
4) Then add whole wheat flour, ground cinnamon, salt and baking soda and gently stir until the ingredients are combined.
5) When the batter is thick, fold in the chocolate chips and chopped walnuts.
6) Pour the batter into the baking tray and bake for 50 minutes.

全麥南瓜麵包:南瓜泥麵團、南瓜餡、南瓜造型整形手法 How to Shape Pumpkin Bread
這次分享兩種南瓜麵包做法,第一種使用南瓜泥替代主要水分,第二種是包入南瓜餡,南瓜造型也試了兩種。
這次的南瓜餡是參考厲害的寶春師傅書內南瓜餡的,非常的滑順好吃!我自己有點怕生南瓜的味道,烤過之後那種我怕的味道完全不見了,取而代之的是帶有點堅果香氣的甜味。秋天吃南瓜正是季節,最棒了。

※材料配方
A.南瓜馬車全麥麵包(麵團加入南瓜泥,無包餡)
可做17~18個
● 中種麵團
高筋麵粉 200g
全麥麵粉 150g (使用Bob's Red Mill Whole Wheat Stone Ground Flour)
水 230g
速發酵母 5g
● 主麵團
高筋麵粉 150g
糖 40g
水 50g
南瓜泥 80g (可以直接用蒸熟的南瓜或是用接下來分享的南瓜泥內餡都可)
鹽 10g
奶油 25g
肉桂粉 5g
B.南瓜全麥核桃麵包(包南瓜餡)
● 中種麵團
高筋麵粉 200g
全麥麵粉 150g (使用Bob's Red Mill Whole Wheat Stone Ground Flour)
水 230g
速發酵母 5g
● 主麵團
高筋麵粉 150g
糖 40g
牛奶 20g
水 78g
鹽 10g
奶油 25g
肉桂粉 5g
核桃(切小塊, 約0.5cm)100g
