CHICKEN TIKKA 🐓 We recently attended a cook off organised by @mysouledout and were lucky enough to learn a few tips on cooking North Indian dishes. Celebrity chef @sapnaanand has also prepared a simplified Chicken Tikka recipe for home cooks that is easy to put together and is a delightful addition to the table! Sharing the recipe here so you can make it too ❤️
Ingredients
250g boneless chicken thighs
For the marinade:
4 tbs yoghurt
2 tbs ginger & garlic paste
2 tbs chilli powder
1 tbs garam masala
1 tsp roasted cumin powder
2-3 tsp lime juice
Salt to taste
Method
Mix marinade ingredients together and add in chicken thighs. Rest in chiller for a minimum of 1 hour to overnight.
Preheat oven to 180°C and ready wooden skewers that have been soaked in water.
Line tray with aluminium foil and place a cooking rack over it.
Thread chicken into skewers and place it on the rack to grill at 175°C for 25 minutes or until done.

所需食材:
馬薩拉醬:
1 湯匙 油
1 顆 洋蔥
3-4 瓣 大蒜
1 小根 薑
1-2 根 綠色的墨西哥辣椒
3/4 湯匙 馬薩拉綜合香料
1/2 茶匙 卡宴辣椒
1/2 茶匙 肉桂粉
鹽
5 顆 中型番茄
1 顆 中型 紅甜椒
300 ml 椰奶
麵糊部分:
200 g 麵粉
1/4 茶匙 鹽
5 g 泡打粉
1/2 茶匙 薑黃
360 ml 氣泡水
4 茶匙 油
4 湯匙 黑芝麻
其它:
1 顆 中型花椰菜
1 鍋 油
腰果奶油部分:
150 g 腰果
60 ml 水
米飯部分:
250 g 白米
3 顆 小荳蔻
3 顆 八角
鹽
作法:
1.) 將大蒜、墨西哥胡椒、洋蔥和薑切成小塊,然後將所有食材放置鍋裡並加入辣椒、馬薩拉綜合香料和肉桂,然後短暫煮一下香料。接著加入切碎的番茄、紅甜椒和椰奶,用中火煮約15至20分鐘。煮好後就是咖哩。如果對不夠濃稠,可以用攪拌機攪拌。
2.) 將麵粉、泡打粉、黑芝麻、薑黃、植物油、鹽和氣泡水混合攪拌到沒有結塊。但是,攪拌時間不能太長,否則會由於碳酸而失去了「蓬鬆性」。
3.) 現在將花椰菜一個一個地浸入麵糊裡,直到完全覆蓋,然後放進熱油鍋炸。
4.) 腰果奶油和白飯是搭配馬薩拉最好的配料。將腰果浸泡在水中2至3小時,然後與水一起放入攪拌機中,接著將其製成泥狀,直至獲得無碎片的奶油狀稠度。
5.) 煮飯時,將小荳蔻、八角和鹽一起煮。
