來一點高檔次餐廳食評😎。今次黎到紅磡黃埔區既嘉里酒店食好西😍,雖然位置離地鐵站都有點距離,但一黎到靠近海濱呢個area,環境舒適,讓人心曠神怡😌。而Bong 位於嘉里酒店一樓,主打韓式熟成牛,晚上靠近窗邊坐,可見維港夜景,係一餐美扒伴美景的豪華浪漫之夜。

有兩小塊香脆多士伴牛油作餐前小吃,幾香脆,但略厭細塊左少少。

上枱已聞到黑松露香,飲得出用左好多磨菇搞拌已成,成個湯幾rich同有黑松露香,而且仲有唔少磨菇片~鹹香配合得宜,好飲😋。

鵝肝蝦煙肉伴哈密瓜醬:一啖食落口會先食到煙肉既香煎味,後有爽口蝦味同鵝肝香。不過鵝肝味有少少比煙肉搶左,但幾欣賞佢哋以哈密瓜蓉做底,有創意之如,成個口感有層次得黎又幾Fresh。

黎到主角熟成牛扒😍,有3款選擇,我地揀左Ribeye。先黎6款調味料,分別有海鹽、火山鹽、紫菜鹽、黑椒、法式芥辣同酸瓜。點了五成熟,熟度拿捏得剛剛好,外層煎得香透帶紋,內裡肉質鮮嫩,肉汁豐富,口感食落帶爽,配搭調味料令牛肉香更突出。

食完Steak,食呢個 完全唔會覺得濟,反而覺得開胃左,主要因為佢用左檸檬汁,成個口感清新開胃,食得出調味諗過度過😆!

到是日甜品係法式焦糖燉蛋伴雜果。燉蛋焦糖同蛋香都好濃郁,口感幼滑,而雜果都幾鮮甜,唔會覺得酸。

Steak with Garlic Chips and Fresh Spaghetti Cooked in Hokkaido Milk and Pecorino Cheese topped with an Organic Egg Yolk
This dish highlights very special products found at Great Food Hall. The dry aged beef, aged in house is seared to perfection in garlic oil and cultured butter and topped with garlic chips. Fresh spaghetti made in-house is cooked in Hokkaido milk and pecorino cheese selected from the cheese room. An organic egg yolk marries all the elements together.
1 steak (Striploin or Tenderloin)
1 packet Fresh spaghetti
1/2 head of Garlic
30g Pecorino cheese, grated
30g Pecorino cheese, grated for garnish
500ml Hokkaido Milk
2 egg yolks
1 onion, diced finely
500ml water
Instructions:
Slice the garlic and fry until golden. Set aside. Drain the pan.
Season and sear the steak in a hot pan with the garlic oil, turn down the heat and add culture butter. Cook for 1 minutes more and set on a tray. Roast in a 180C oven until medium rare (56-58C centre).
Sweat the onions on low heat.
Add water and milk and bring to a boil. Cook the pasta and add 30g grated cheese into cooking liquid season well and continue to cook the pasta.
When the pasta is cooked, drain.
Use another pan and sauté the pasta. Season.
Serve with the steak and a fresh egg yolk

這方法是給當年教我的廚藝菜鳥妹妹做的食譜。買了品質好的牛排回家,但不知道怎麼掌握火喉,完全不瞭解家裡的平底鍋和爐具的脾氣。怕一不小心把牛排煎壞了,傷了荷包還失了分。廚藝不好,廚具搭夠。利用烤箱分層多可同步烘烤的特點,以及鑄鐵鍋有效保存高溫,煎烤的方法,更容易掌控牛排溫度,特別適合新手。五色時蔬和牛排通通丟進烤箱,熱騰騰的蔬菜,可以跟牛排同時上桌,營養均勻,特別適合冬天,一個人也可以輕鬆完成的燭光晚餐。
疫情期間我們不吃半熟牛排,熟成牛排有酵素分解肉質裡的蛋白質,可以煎得較熟也不會產
生筋感,口感和風味都棒棒的。
