Fasting from red meats 🥩 until Easter.
On the environmental side, beef in particular has the highest carbon footprint among meats, causing the most environmental damage. The greenhouse gas production per serving of chicken or pork is about 20% of beef!

I’ve been hanging around Central for work recently, so I’m trying to hit up all these CBD eateries one by one🤓 So here I was getting #tapas at @_la_rambla__ located inside IFC during lunch break the other day.
Tomato Tartare🍅($120HKD) A super creative dish. Instead of using raw beef or tuna, this refreshing dish features tomato as its main character🤩 It is served with crisped toast, just like any regular tatare; However, it’s vegetarian, smaller carbon footprint and better for our planet🌍❤️
Red Prawn Paella🦐 This was the main course to my lunch set. The lunch sets here cost a little over $300HKD and are great for sharing. I’m normally not a huge fan of the paella: its portions are normally way too big, and I feel stressed having to finish it when every bite tastes the same. Yet the size of the paella here is perfect for 1-2 persons😍 Moreover, I can taste the richness of the seafood broth used in creating this dish🤤 Delicious!

The word “bulgogi” translates to “fire meat.” Traditionally, it refers to a Korean barbecue favorite, beef prepared with flavorful marinade, then grilled over a flame. For a twist, we used Pure South lamb rack, which happens to be grass fed, high quality meat. Marinating the meat overnight ensure the meat is flavourful. It results in melt in your mouth tender lamb chops. Grilling it in the comfort of your home’s stove top, brings out the big bold flavours of the bulgogi marinade that compliments well with lamb chops. The result is some serious finger licking bulgogi lamb chops that makes your mouth zing!
The meat is served with lettuce leaves and other veggies, hot pepper paste, and a slightly savoury spicy tart dipping sauce. Guests use all of the ingredients to assemble their own lettuce wraps, which is a common practice in Korean restaurants.
Pure South originates from New Zealand, where the environment is clean with little carbon footprint. Even the owners are farmers themselves, which show a lot in them bringing the best quality meats to consumers.
